Dal Palak

This is an easy curry for rice and chapathi………..and very healthy too……after having non-veg for sometimes we like to have total veg foods……..so those days I prepare like this curries……….



















Ingredients:

1c Masoor dal
2 Medium bunches Palak
3 Cloves garlic
2 Green chillies
1 Tomato
1tsp Red chilly powder
½ tsp Turmeric powder
1c Thick coconut milk
Salt
Water
For Tempering:
Oil
Mustard seeds
2 Whole red chillies
Curry leaves


















Method:
1.First cook the dal with sufficient water.
2.Add the chopped palak,turmeric powder,red chilly powder,green chillies,sliced tomatoes,sliced garlic and salt.
3.Boil this till the palak is cooked.
4.Now add the coconut milk and just boil.
5.Heat oil in a pan add the mustard seeds.
6.When it starts spluttering add the whole red chillies and curry leaves.
7.Pour this over the curry.
8.Serve hot with rice or chapathis.

Broken Wheat Payasam

My hubby’s ever fav payasam this is………….when ever I ask him what payasam to make he first says this one………this is very easy and even lil healthy I say because not sugar is used jaggery is the one used in this for sweetness and coconut milk is also there………….and wheat is always good………..



















Ingredients:
1c Broken Wheat
2c Melted jaggery or more as required
2c Thin coconut milk
2c Thick coconut milk
2tsp Cardamom powder
Ghee
Broken cashewnuts
Raisins


















Method:

1.Pressure cook wheat with sufficient water.
2.In a pan melt jaggery with little water.
3.After melted strain this melted jaggery to cooked wheat.
4.Keep this on the flame and boil it till it is mixed well and thickens.
5.Add little ghee and cardamom powder while stirring.
6.Add thin coconut milk and keep on stirring till it thickens.
7.Add thick coconut milk and just boil.
8.If it gets thick again add little more coconut milk.
9.Heat ghee in a pan roast the cashews and raisins and pour over the payasam.
10.Serve hot or cold

Thakkali Chamanthy

This is an easy chamanthy for idli and dosa……..with very less ingredients which is always available in our kitchen…………..



















Ingredients:
1 Big onion
2 Medium tomatoes
1 Small piece Ginger
¼ tsp Turmeric powder
½ tsp Red chilly powder
Salt
Oil

For Tempering:

Oil
Mustard seeds
2 Whole red chillies
Curry leaves



















Method:

1.Heat oil in a kadai and sauté chopped onion in it.
2.When it is transparent add chopped ginger and mix well.
3.Add the turmeric powder and redchilly powder and sauté well.
4.Now add the chopped tomatoes.
5.When the tomatoes are soft add salt and off the flame.
6.Let this cool for sometimes.
7.Grind this mixture in a mixer.
8.Heat Little oil in a pan.
9.Put the mustard seeds,when this starts spluttering add the whole red chillies and curry leaves.
10.Add the grind mixture to this and mix well and sauté till the water evaporates and the mixture thickens.
11.Serve with idlis or dosas.

Banana Cake With Chocolate Chips

This is a simple cake and tasty too………….bananas are all time fav of my family so I used think what to make different dishes with bananas…….this cake was so moist also……..and the chocolate chips in between gave a great taste too.............



















Ingredients:

2c All purpose flour
2tsp Baking powder
2 Eggs
3 Bananas Mashed
½ c Powdered sugar
1c Butter or oil
1tsp Vanilla essence
½ c Chocolate chips
½ c Milk


















Method:

1.Seive the baking powder and flour and keep aside.
2.In a bowl beat sugar and butter or oil.
3.Now add eggs one by one and beat well after each addition.
4.Add vanilla essence and mix well.
5.Now slowly add the flour and milk and beat well.
6.Now add the mashed bananas and mix well.
7.Add the chocolate chips and mix.
8.Preheat the oven at 200 degree C for 15 mins.
9.Grease a loaf tin and pour the batter in it.
10.Bake in the preheated oven at 180 degree C for 45 mins to 1 hr or till it is fully done.
11.Allow it to cool.Cut into slices and serve.

Pumpkin Coconut Milk Curry

Hi friends, back after some busy days to normal days…………so thought of posting some easy dishes……….
Before going to the recipe,there is a participation certificate from akila for participating in her event Dish name starts with :A….Thanx akila………..




Now to the Recipe..................



















Ingredients:

½ kg Pumpkin
½ c Masoor dal or toor dal
½ tsp Redchilly powder
¼ tsp Turmeric powder
2 Green chillies
1c Thick coconut milk
Water
Salt

For Tempering:
Mustard seeds
2 Whole red chillies
Curry leaves
1tbsp Oil


















Method:

1.In a vessel put dal and water and bring to boil.
2.When the dal is cooked add the pumpkin pieces,green chillies,redchilly powder,turmeric powder and salt.
3.When the pumpkin is cooked and soft add the coconut milk and just bring to boil.
4.Off the flame.
5.In a pan heat oil add the mustard seeds when it starts spluttering add the whole red chillies and curry leaves.
6.Pour this over the curry.
7.Serve hot with plain rice.

Eid Mubarak!!!!!!!!!!!!!And Strawberry Cheese Cake

Advance Eid Mubarak to all of u……………..tomorrow I’ll not be able to sit here and sent my wishes to all as I’ll be so busy so I’m senting my wishes and love today……..
And celebrate the day with a sweet strawberry cheese cake…………..




















Ingredients:

1pkt Marie or digestive biscuits
½ c Butter melted
1tin Condensed milk
1tin Puck Strawberry cream
1tsp Vanilla essence
½ c Cream cheese
10grms Gelatine
½ c Water
Powdered nuts for garnishing


















Method:

1.Powder the biscuits and mix with melted butter.
2.Now in a pudding dish press this powdered biscuits as a base and keep in fridge.
3.Soak the gelatine in water for 10 mins.
4.In a bowl mix the condensed milk,strawberry cream,essence and cream cheese.(Instead of strawberry cream u can use I tin plain cream and ½ c Strawberry puree also.)
5.Now double boil the gelatine and dissolve.
6.Add the gelatine to the condensed milk mixture and mix well.
7.Now pour this mixture over the biscuit base.
8.Keep this for setting for 3 to 4 hrs.
9.Garnish with nuts and serve.

Potato Bajji

This is an easy snack……….potatoes are really good for health and for kids also……..it is like that 1 small size potato is substituted with an egg for those who don’t eat eggs………..



















Ingredients:

1 Big potato
1c Besan Flour
Water
Salt
½ tsp Redchilly powder
¼ tsp Turmeric powder
¼ tsp Hing Powder
½ tsp Baking soda
Oil for frying




















Method:
1.Cut the potatoes into thin pieces.
2.In a bowl mix the rest of the ingredients into a medium thick batter.
3.Keep this for 5mins.
4.Now heat oil in a kadai.
5.Dip each piece of potato in the batter and deep fry this till crispy and golden brown.
6.Serve hot.

Umm Ali Or Ormali

Umm Ali or ormali is an Arabic dessert………..it tastes so heavenly………..I had this first time from a restaurant and I fallen in love with the taste of this dessert……….I was keeping on searching for this dessert………….I have seen many ways of this dish…..there is a story also behind this dessert………this dessert was made for pleasing sultan by ali’s mother and it named umm ali………every dish has each stories isn’t it………this almost resembles bread pudding ………



















Ingredients:

5 Puff pastry sheets
½ ltr Milk
1tin Puck cream or heavy cream
¼ c Butter
1tin Condensed milk or sugar as per taste
½ tsp Cinnamon powder or vanilla essence
¼ c Raisins
¼ c Almonds chopped
¼ c Pistachios chopped
1tbsp Dessicated coconut


















Method:

1.Preheat the oven at 200 degree C for 10 mins.
2.Bake the puff pastry sheets for 20 mins till puffed up and crispy.
3.Grease a bake tin.
4.Tear the puff sheets and put in the bake tin.
5.Now in a sauce pan mix milk,cream,butter and essence or cinnamon powder and bring to boil.
6.Pour this milk over the puff sheets.
7.Sprinkle the raisins,nuts and dessicated coconut over it.
8.Bake this in a preheated oven at 180 degree C for 20 to 25 mins.

Rice And Honey Pudding

Now this sweet dish is dedicated to all my teachers who ever taught me and supported me in my life………….”Happy Teachers Day”……..without them we are nothing………. Thank you teachers..........
This pudding almost resembles a kheer……..instead of sugar honey is used………This is not so sweet pudding if u want more sweet u can add more honey or sugar………




















Ingredients:

6c Milk
¾ Rice
¼ c Honey or more
1tbsp Chopped Almonds
1tbsp Chopped pisthachios


















Method:

1.In a large pan pour the milk and honey and bring to boil till the honey dissolves.
2.dd the rice and cook in sim for 45mins.
3.When the rice is cooked and the mixture gets thickened pour this to a bowl.
4.Garnish with chopped almond and pisthachios and drizzle some honey also.
5.Serve warm or cooled.

Aavi Ada

An easy and healthy snack……….this is a steamed item.This can be made in banana leaf also.This is shaped by hands.Fillings can be sweeter or spicy ones.



















Ingredients:

For Covering:
1c Rice flour
1 ½ c Water
Salt

For Filling:
2c Grated coconut
¼ c Chopped cashewnuts
¼ c Raisins
Sugar
2tbsp Ghee

Method:

1.Boil the water and salt.
2.Add thr rice flour to the boiling water and mix with a spoon well.
3.Now knead the rice flour mixture when it is warm itself.
4.In a pan heat ghee roast the cashews and raisins.
5,Add the grated coconut and sugar and mix well.
6.Now take small balls out of rice flour dough.
7.Flatten the balls inside the palm and fill with the coconut mixture.
8.Shape this into a half moon shape by hand or we get a ada shaper for this.I don’t use that.I shape with the hands only.
9.Steam this in a steamer.
10.Enjoy with hot tea!!!!!!!!!

China Grass Double Layer Pudding

China grass puddings are very easy to make and it will set very fast……..this is an easy pudding with 2 layers with plain and chocolate layers………I used to make in three layers also……...with different colors…….



















Ingredients:

½ ltr Milk
1tin Condensed milk
1tin Puck Cream
15grms China grass
¼ c Chocolate syrup
½ tsp Vanilla essence
5 Marie or digestive biscuits
1c Water


















Method:

1.Soak the china grass in water for 1hr.
2.In a bowl mix milk,condensed milk,cream and vanilla essence.
3.Mix well with a spoon.
4.Boil the china grass till totally dissolved.
5.Add this china grass to the milk mixture.
6.Divide it into 2 portions.
7.In one portion add the biscuits by breaking into small pieces.
8.Pour this to a pudding dish and keep it for setting.
9.In the other half add the chocolate syrup or melted cooking chocolate and mix well.
10.When the first layer is almost set pour the chocolate layer over it.
11.Keep it back in the fridge for setting fully.
12.Garnish with nuts and chocolate syrup and serve.

Kothu Parotta

Simple recipe if any left over parottas in your fridge…………I had this from an veg restaurant over here……..my hubby is a parotta lover and he likes this dish also very much……….this is very easy to make also……….




























 
Ingredients:
4 Parottas
1 Big Onion
1 Tomato
2 Green chillies
1 Small Capsicum
1 Small piece Ginger
5 Cloves Garlic
2 Cloves
1 Medium piece Cinnamon stick
¼ tsp Turmeric powder
½ tsp Red chilly powder
½ tsp Garam masala powder
1 Egg(optional)
Coriander leaves
Salt
2tbsp Oil




























 
Method:
1.Heat oil in a kadai.
2.Put cloves and cinnamon and roast.
3.Now add sliced onions and sauté well.
4.Add ginger garlic paste and green chillies.Saute till raw smell goes away.
5.Add the turmeric powder,chilly powder and garam masala powder and sauté well.
6.Now add the sliced tomatoes and capsicum.
7.When the tomatoes are soft add the pieced parottas into this and mix well.
8.If using egg beat it and pour to the parottas and mix well till the egg is cooked.
9.Garnish with coriander leaves and serve hot.

Pineapple Pudding

Pineapple flavoured puddings are really yummy……..again this is an very easy pudding which can be made in very less time……….



















Ingredients:

1small tin Pineapples
2tins Puck cream or breakfast cream
1tin Condensed milk
1tbsp Sugar
1pkt Pineapple jelly mix


















Method:

1.Make the jelly as per the instructions on the packet and keep for setting.
2.Now in a sauce pan mix chopped pineapple with sugar and water and boil till pineapples are slightly cooked.
3.Drain the excess water.
4.In a pudding dish mix the cream and condensed milk.
5.Add the cooked pineapples to the condensed milk mixture and mix well till the pineapples are evenly spread.
6.Keep this in the fridge.
7.When the jelly is set crush the jelly with spoon and mix with the cream and pineapple mixture.
8.Keep for setting for 1 hr or chilled.
9.Serve in bowls.

Chatti Pathiri

Again a Malabar dish ……..this is a lil time consuming but really tasty.this is made by layering pancakes and coconut and nut mixture……..



















Ingredients:

For Pancakes:

1c Maida
1 Egg
Salt
Water

For Filling:

2c Grated coconut
1 c Sugar
¼ c Chopped cashews
¼ c Raisins
4 Eggs
2tbsp Ghee

For Coating The Pancakes:

3 Eggs
¼ c Sugar
1tsp Cardamom powder


















Method:

1.In a bowl mix the ingredients for the pancakes to a loose batter.
2.Heat a tawa and pour one big spoon of batter and swirl the tawa and cook the pancakes one by one and keep aside.
3.Now heat a pan add ghee and roast the cashews and raisins.
4.Add the grated coconut and mix well.
5.Add the sugar and mix well.
6.Now beat the eggs and mix with the coconut mixture and mix well till the egg is cooked and crumbled.
7.Now in a bowl mix the eggs, sugar and cardamom powder for dipping the pancakes.
8.Grease a baking tin dip one pan cake in the egg mixture and layer in the baking tin.
9.Now spread some coconut mixture over the pancake.
10.Now dip another pancake in the egg mixture lay on top of the coconut mixture.
11.Continue this till the pancakes and coconut mixture finishes.
12.The rest egg mixture pour on top layer.
13.Preheat the oven at 200 degree C for 10 mins.
14.Bake the chatti pathiri at 165 degree C for 25 to 30 mins or till the top becomes brown.
15.You can do this on stove top also in a non stick vessel.
16.Cut into pieces and serve.
