Upside Down Pineapple And Coconut Cake And An Award

This cake is soooooo soft and moist………..and the flavor of pineapple and coconut was a real combination…….my hubby and my friends really loved this cake………..

This may be my last post of this year ,because will be busy with packing and all.Shifting to new house......So advanced Wishes to all.......Merry Christmas And A Happy New year to all.Have a great year ahead and god bless everybody........See u all next year........



















Ingredients:

2c All purpose flour
¾ c Powdered sugar
3 Eggs room temp
1c Butter room temp
1tsp Pineapple essence
1½ tsp Baking powder
½ c Chopped pineapple
½ c Dessicated coconut
½ c Syrup of tin pineapple


For Layering:

1 tin Pineapple rings
1tbsp Brown sugar
1tbsp Dessicated coconut
10 pieces Cherries




















Method:

1.Sieve flour and baking powder.
2.In a bowl beat butter and sugar till creamy.
3.Now add each eggs one by one beating well after each addition.
4.Now add the essence and mix well.5.Now add the flour and tin syrup and fold in slowly till it is fully mixed well.



















6.Now add the chopped pineaaple pieces and desicatted coconut.
7.Now grease a cake tin sprinkle brown sugar and dessicated coconut.
8.Now place pineapple rings to cover the bottom and place one cherries in the holes.
9.Preheat the oven at 200 deree C for 20 mins.
10.Bake the cake at 175 degree C for 45 mins or till the tester comes out clean.
11.Serve warm or cooled.

Chilly Gobi

Cauliflower is not that much fav veg of mine……….but sometimes its really good to have some curries or dry fries of cauliflower.In this I just added some cashews also which gave the curry a good taste.
Now we shall go to the recipe…..




















Ingredients:
1 big piece Cauliflower
1 Onion
1 Tomato
4 Cloves Garlic
1 Small piece Ginger
½ tsp Cummin seeds
1tsp Kashmiri chilly powder or more
½ tsp Turmeric powder
5 Cashew nuts
Coriander leaves
Salt
Oil


















Method:
1.Break the cauliflower into small florets.
2.Put this in hot water with turmeric powder.
3.Drain the water after 10 mins.
4.In a kadai heat oil and shallow fry the cauliflower til slightly crisp.
5.Drain out excess oil.
6.Now in the same oil splutter cummin seeds and sauté chopped onions.
7.When the onion turn to transparent and the chopped garlic and ginger.
8.Saute well and add the broken cashewnuts.
9.When this is fried andd the chilly powder and turmeric powder and sauté well.
10.Add the chopped tomatoes and mix well till the tomatoes are soft.
11.Now add the cauliflower and salt and mix well.
12.Close the lid and cook in sim till the mixture is dry.
13.Garnish with coriander leaves.
14.Serve hot with chapathis.

Moru Curry

This is a simple and tasty curry for rice…….healthy also.In moru kachiyathu we don’t use any vegetables.In this curry we use vegetables like chena,chembu and kumbalanga etc….
Now we’ll go to the recipe…..




















Ingredients:
½ kg Chena,chembu or kumbalanga or mix of these vegetables
3 Green chillies
½ tsp Turmeric powder
½ tsp Red chilly powder
1 c Curd
½ c Grated coconut
¼ tsp Cummin seeds
¼ c Water
Salt
For Tempering:
Oil
Mustard seeds
Fenugreek seeds
2 Whole red chillies
Curry leaves


















Method:
1.In a vessel put the cleaned and cut vegetables.
2.Add the turmeric and red chilly powder and salt.
3.Pour some water and cook till the pieces are soft.
4.In the blender put curd,grated coconut,cumin seeds and water and blend till the mixture is very smooth.
5.Pour this to the vegetables and mix well.
6.Now heat oil in a small pan and add mustard seeds and fenugreek seeds.
7.When it starts spluttering put the whole red chillies and curry leaves.
8.Pour this over the curry.
9.Serve hot with plain rice and pappadam.
