Chicken Chukka

This is a dry chicken dish which is very tasty with chappathi.........this take lil time to get prepared but really very tasty......this can be a starter or a main dish with chappathi or kubus.



































Ingredients:

1kg Chicken
3big Onions
1big Tomato
3 Green chillies
3 Cloves Garlic
1/2tsp Red Chilly powder
1/4tsp Turmeric powder
1/2tsp Fennel seed powder
1/2tsp Garam masala powder
Salt
Curry Leaves
Coriander Leaves
Oil for frying

For Marination:

1/2tsp Red chilly powder
1/4tsp Turmeric powder
2tsp Ginger garlic paste
Salt



















Method:

1.Clean the chicken and drain off excess water.
2.In a bowl put chicken and ingredients for marination and marinate the chicken and keep aside for 1 hr.
3.Now in a frying pan pour oil.
4.When the oil is hot put the chicken in it and fry till slight dark brown.
5.Now in another pan pour 2tbsp of chicken fried oil.
6.Heat the oil and add the sliced onions and saute till brown.
7.Add the sliced garlic.Saute well.
8.Now add the red chilly powder,turmeric powder,fennel seed powder and garam masala powder and mix well till the raw smell goes away.
9.Now add the sliced tomatoes and mix well.
10.When the tomatoes are soft add the fried chicken pieces and mix well and in a low flame keep on sirring.
11.Stir till when the masala becomes dry and dark brown.
12.Add salt if needed and add curry leaves and coriander leaves.
13.Serve hot with chappathi or kubus.

Tomato Chicken

This is a simple dish of chicken with a tomato touch............this was tasty and will go very well with parotta and nan.........



















Ingredients:

1kg Chicken
2big Onion
7cloves Garlic
1med pc Ginger
1big Tomato
3 Green Chillies or more as per requirement
1/2c Tomato paste
1/4c Tomato ketchup
1 Capsicum
1tsp Cumin powder
1tsp Kasuri methi
Coriander leaves
Salt
Butter or oil

For Marination:

1 1/2 tsp Crushed red whole chillies
3tbsp Yoghurt
A pinch of red colour
Salt


















Method:

1.Cut and clean chicken.
2.In a bowl marinate the chicken with the ingredients under for marinate.
3.Keep aside for 1/2 hr.
4.In a pan heat butter or oil and put chopped onions and salt.
5.When onions are transparent add the chopped garlic,ginger and green chillies and saute well.
6.Now add the tomato paste and tomato kechup and mix well.
7.Now add the marinated chicken and mix well and cook half.
8.When the chicken is half done add the chopped tomatoes,sliced capsicum,cumin powder and kasuri methi and mix well and let the chicken cook fully.
9.After cooked if u want dry let the liquid evaporate and become dry or can serve as semi gravy also.
10.Serve hot with fried rice,parotta or nan.

Arayes

This is an easy and tasty arabic dish.This is a grilled dish with meat mix filled in pita breads.



















Ingredients:

1/2kg Minced meat
1big Onion
1 Tomato
1/2tsp Cumin powder
1tsp Pepper powder
1/2tsp Garam masala powder
1/2c Parsely leaves chopped
1/2tsp Olive oil
6small Pita breads
Salt


















Method:

1.Clean the meat well and drain the water well.
2.In a bowl mix all the ingredients except pita breads and mix well.
3.Now cut the pita breads into half.
4.Now fill a tbsp of meat mixture and spread well.















5.Preheat the oven.
6.Now in a tray keep the meat filled pita breads and brush olive oil on top of these pita breads.
7.Now grill these breads till both the sides are browned and crispier.
8.Cut each piece into halves and serve hot with hummus or yoghurt.

Banana Halwa

This is an easy halwa made with kerala banana(Nenthra pazham).This is so tasty and healthy also.If we add ghee also those ghee will come out from the halwa at the last stage of cooking.Kids will love this.If we make this in 'uruli' this will get a dark brown color as I cooked in non stick vessel this has got a golden color but the taste was too good.



















Ingredients:

6big Nethrapazham
1c Sugar
1/2c Water
1/2tsp Cardamom powder
3/4 to 1 c Ghee
1/2c Chopped (cashewnuts plain or roasted in ghee)
2tbsp Maida mixed with water thinly


















Method:

1.In a non stick large vessel put the sugar and water and boil.
2.Boil till it slightly thickens.
3.Add the chopped bananas and keep on stiring.
4.Stir till all the bananas are totally cooked and fully mashed.
5.While stirring add ghee and maida mixture in small amounts.
6.Keep on stirring till the mixture thickens and seperates from the vessel.
7.At this stage add the cardamom powder and cashewnuts.
8.Mix well and stir for 2 or 3 mins more till the ghee oozes out.
9.Off the flame.
10.Now transfer this halwa to plate and smooth the top of halwa.
11.Let it cool for couple of hours.
12.After cooling cut into desired shape and serve.

Tomato Dal

This is an easy dish which can be made any time.This is very good with rotis and even with rice.......



















Ingredients:

1c Masoor dal
1big Onion
4cloves Garlic
2big Tomatoes
3 Green chillies
1/2tsp Turmeric powder
1tsp Red chilly powder
Coriander leaves
Oil/Butter or Ghee
Mustard seeds
Cumin seeds
1/4tsp Hing powder



















Method:

1.Wash and cook the dal and 2 cloves garlic cut in rounds till soft.
2.In a pan heat oil/butter or ghee and splutter mustard seeds.
3.Add cumin seeds.
4.When these splutters add the chopped onions.
5.Now add the rest of garlic and green chillies and mix well.
6.Add the turmeric powder and red chilly powder and mix well.
7.Now add the chopped tomatoes.
8.Cook well till the tomatoes are soft.
9.Now add this to the cooked dal and mix well.
10.Add the hing powder and let it boil for a minute to all the spices incorporate with the dal.
11.Off the flame and add coriander leaves.
12.Serve hot with rotis or plain rice.

Red Velvet Cake

I was thinking to make this cake for a long time..........but didn't find a good reason to make this one.Yesterday was our 9th wedding anniversary and got a very good reason to bake this cake......and I was really happy to see the final result.The cake cake came out so good.

And one thing I got mistake on the cake was the spelling of 'anniversary',I missed one 'r' on the cake while writing because my 3 r's(my kids ridha,raed and raghd) were making me crazy and I missed an 'r' while writing LOL!!!!!!!!!!

I didn't notice the mistake then also when I took the cake and focused the camera on the cake I saw something was missing there Oh no I made spelling mistake hehehe!!!!!!!!!!
I was a little disappointed, then thought only we r there so let it be like that........
Anyway lets go to the cake........this is the recipe adapted from joyofbaking.com.

I made the cake in 2 different size pans.Because i didn't have the same sized ones.



















Ingredients:

2 1/2c All purpose flour
1tsp Baking powder
1 1/2 c Granulated sugar
1/2 c Butter room temp
2 Large Eggs room temp
1tsp Vanilla essence
3tbsp Cocoa powder
1c Butter Milk(I used yoghurt)
2tbsp Red liquid food color
1tsp Baking soda
1tsp Vinegar

For Frosting:

4 Sachets Dream whip powder
1 c Cream cheese
1/2 c Powdered sugar
1/2 c Cold milk
1tsp vanilla essence
2drops red food color for writing
Sugar sprinkles for side



















Method:

1.Sift flour,baking powder and cocoa powder and keep aside.
2.Mix the red color to the butter milk and keep aside.
3.Now in a bowl put butter and just beat for some seconds.
4.Now add the sugar and beat till sugar is dissolved.
5.Now add egg one at a time and beat well after each addition.
6.Add vanilla essence and mix well.
7.Now add the flour and butter milk mixture alternatively and mix well.
8.Now in a small bowl take vinegar and put the baking soda to the vinegar.
9.When its bubbling pour this to the batter and mix well.
10.Preheat the oven at 200 degree C for 15 mins.
11.Grease 2 baking pans and line with wax paper.
12.Pour the prepared batter to the tins.
13.Bake at 175 degree C for 30 to 35 mins or till the tester comes out clean.


















14.Allow the cake to cool at room temp and then keep in the fridge for 1 hr.
15.For frosting,In a bowl put the dream whip powder and pour cold milk and beat well till fluffy and peaks appears.
16.Add vanilla essence and cream cheese,powdered sugar and mix well.
17.Now for assembling the cake,cut both the cake horizontally into 2 pieces.
18.Keep a layer of cake spread the frosting on this layer then keep the other piece on top of the frosting then again spread the frosting like this finish up the layers.
19.Now spread the frosting on top and sides of the cake and smooth out well.
20.Decorate with sugar sprinkles.
21.In rest of the frosting add the color for writing and piping any other decorations.
22. Refrigerate cake for couple of hour before serving.
23.Slice and enjoy the cake.........

Chocolate Cups Filled With Coffee Cream

I have seen many ways of preparing chocolate cups.This is and easy way by brushing melted chocolate to cup cake liners.You can give any filling i gave a coffee filling which was really tasty with this chocolate cups.




































Ingredients:

For Chocolate Cups:

250grms Cooking chocolate
15 Cup cake liners

For Coffee Filling:

2 Sachet Dream whip powder
1/2c Cold Milk
1tsp Cocoa powder
1tsp Coffee Powder
1/2 tsp Vanilla essence
Nuts or crushed biscuits for garnishing


















Method:

1.Melt the chocolate by double boiling method.
2.When it is fully melted brush the cup cake liners with melted chocolate.
3.Refrigerate it till it sets.
4.Take it out and give a second coat of chocolate in the cups.
5. Again keep this for setting.
6.Now for filling in a bowl put the dreamwhip powder,cocoa powder,coffee powder,vanilla essence and cold milk and beat till thick peaks appears.
7.Now keep this in the fridge.
8.Now before filling the cups tear off the liners slowly and carefully without breaking the cups.
9.Now fill a piping bag with the coffee filling and pipe the filling to each cups and garnish with nuts or crushed biscuits.
10.You can even fill this with plain vanilla ice cream topped with nuts.
11.Enjoy the chocolate cups!!!!!!!!!
