Plum Cake/Fruit Cake

Hi friends!Happy Christmas to all........this is my first attemp to bake plum cake or fruit cake.Happy that it came out so well and all liked it so much!!!!!!!!So thought will post it today because theres no christmas without plum cake.

Now to the recipe:






















Ingredients:

2 1/4C All purpose flour
1 1/2C Butter room temp
1 1/4C Powdered sugar
5 Eggs room temp
1 1/2tsp Baking powder
1/4tsp Baking soda
A pinch of salt
1/2 to 1C Caramel syrup
1/2 tsp Vanilla essence
1/2tsp Cinnamon powder
1/2tsp Cardamom powder
2 Cloves
1/4tsp Nutmeg powder
2 to 3C Dry fruits and nuts(cashews,black currants,raisins,cherries etc)
2C Fresh orange juice for soaking the fruits and nuts
Icing sugar for dusting




































Method:

1.Seive the dry ingredients(flour,baking powder,baking soda and salt) and keep aside.
2.Seperate egg yolks and whites.
3.Powder the sugar along with spices.
4.Caramalize 1/2 to 3/4 c sugar till dark brown be carefl not to burn the sugar.
5.Add 1/2 C hot water to this cramelized sugar.This should be done very slowly otherwise the hot bubbles may burn your hand.
6.Keep this aside.
7.Now beat the egg whites till stiff peaks appears.
8.Now beat the egg yolks and sugar in another bowl till very creamy.
9.Add softened butter to this and beat well.
10.Add the caramelized sugar syrup to this egg and butter mixture.



















11.Toss the soaked fruits and nuts to the flour mixture.
12.Fold in this flour and nuts mixture to the butter mixture very slowly.
13.After the flour is mixed well fold in the egg whites slowly to this.
14.Pre heat the oven at 200 degree C for 10 to 15 mins.
15.Grease the cake tins and line it with butter paper.
16.Pour the batter to the prepared tins.
17.Bake at 180 degree for 45 mins to 1 hr or till the tester comes out clean.
18.It took almost 1hr for me.
19.Cool the cakes in tin for 20 mins and then remove from the tins.
20.Allow the cakes to cool completely sprinkle the icing sugar on the cakes.
21.slice and serve.



















Notes:

1.Soak the fruits in orange juice for atleast one week.

Beef Roast

This is an famous kerala dish.This was my guest post bonjour series at jabeen's corner.Will go to the recipe.



















Ingredients:

Beef 1kg
shallots 1c
onions 2 big
tomato 1 big
garlic 1 bulb
ginger 1 big pc
green chillies 3 no:s
red chilly powder 1
tspturmeric powder 1/2 tsp
coriander powder 2tsp
Garam masala 1tsp
pepper powder 1 tsp
fennel seeds powder 2tsp
Fried coconut pieces 1/2c (optional)
coconut oil
salt
curry leaves
coriander leaves


















Method:

1.Cook the beef with half chilly powder and turmeric powder and salt in a pressure cooker till done.
2.In a pan heat coconut oil and add sliced shallots and onions.
3.When this becomes brown add ginger garlic paste.
4.Saute well and add the powders and mix well.
5.Now add the sliced tomatoes and mix well till the tomatoes are soft.
6.Put the cooked beef into thos masala and mix well.
7.Roast till all the water evapourates and becomes dark brown.
8.Add little coconut oil in between the roasting.
9.If addind fried coconut pieces add at this point.
10.Add curry leaves and coriander leaves.
11. Serve hot with chappathis or parotta.

Kerala Kitchen Event Announcement!!!!!!!













Happy to announce the first event on my blog.Hosting the kerala kitchen event for the month of November 2011.

I know no one need an introduction for this event as the name, it is all about kerala dishes.Sent in the entries as many as u can.Any kerala dishes which has the some of the typical ingredients : Coconut, bananas and plantains, tapioca/ yucca, mango, jackfruit, lentils, cashews, pepper, cardamom, cloves, tamarind, rice and rice flour, ginger, curry leaves, jaggery, buttermilk etc.

Email your entries to me with your name, a photograph of your dish (preferably a thumbnail, no wider than 300 pixels) and a link to your post before or on the 30th of that month, with the subject line: The Kerala Kitchen. Banana Cooler


Hi friends..........have not blogged for few weeks.....actually I'm into my small new business of catering at home itself which kept me busy and away from blogging these days.Hope all r doing good.I was thinking to post this recipe for iftar again didn't get time.This is a very easy and healthy dish to cool ur body.So I gave it the name banana cooler.
This can be made in coconut milk also but i like this more with fresh milk.



















Ingredients:

6 Small bananas (Cherupazham any type)
Sugar as per taste
1tsp Cumin powder
4 to 5 shallots finely chopped
1c Cold Fresh milk or Coconut Milk


















Method:

1.In a bowl peel the bananas and mash it with hand.

2.Add sugar as desired.
3.Add the shallots and cumin powder.
4.Mix well and add the milk as how u need the consistency.
5.Serve in bowls.

Date And Carrot Cake

Dates and carrots both are good for health and if both comes in one recipe its even more tasty also.
I got some fresh dates from my friend so I thought to make some thing with dates.First thing always click to mind is a cake then thought will add something more into it so I added carrot to it.
And the cake was so soft and tasty also.




































Ingredients:

2c All purpose flour
1/2 to 3/4 c Powdered sugar
1/2c Butter room temp
1/2c Oil
3 Eggs room temp
1 1/2tsp Baking powder
1/2c Milk
2tbsp Date Paste
1 Carrot grated
1/2 to 3/4c Sliced dates
1/2tsp Vanilla essence
1/2tsp Cinnamon Powder



































Method:

1.Seive flour,cinnamon powder and baking powder and keep aside.
2.In a bowl beat butter,oil and powdered sugar till creamy.
3.Now add eggs one by one beating after each addition.
4.Add vanilla essence and beat well.
5.Now add the date paste and mix well.
6.Now slowly add the flour mixture and fold in well.
7.If the batter is thick pour milk and mix well.
8.Add the sliced dates and grated carrots and mix well till combined well.


















9.Preheat the oven at 200 degree C for 15 mins.
10.Grease a cake tin and pour the batter to the tin.
11.Bake it at 180 Degree C for 35 to 40 mins or till the tester comes out clean.
12.Slice and enjoy with coffee or tea.

FFC (Faji's Fried Chicken)

This is my first attempt to try out something which tastes like famous fried chicken KFC.I didn't get the exact taste but the taste was different and very flavorful.So I named it as FFC LOL.......
For KFC they say there are 11 secret ingredients.I didn't get that much ingredients and the many thing they use is MSG(Mono sodium Glutamate)or Ajinomoto.I didn't use that because I don't like that to use in my foods as it is not good for health.Anyway we shall go to the recipe how i made......



















Ingredients:

8pcs Of Chicken
1c All purpose flour
1tsp Oregano
1tsp Thyme
1tsp Parsley
1tsp Basil
1tsp Marjoram
1tsp Garlic Powder
1 or 2tsp Pepper Powder
2 Eggs
3tbsp Milk
Salt


















Method:

1.Clean the chicken and boil it with little salt.
2.When the chicken is cooked drain off the excess water.
3.Now in a bowl mix the all purpose flour and all the dry herbs and salt and mix well.
4.Just powder this mixture till all the herbs blend well.
5.Beat the eggs and milk and keep aside.
6.Now coat the chicken in the herb mixture.
7.Now dip this in egg mixture and then back again in herb mixture.
8.Now repeat this with all the rest pcs of chicken and keep aside.
9.Heat oil in a kadai and deep fry this chicken pcs till golden brown and crispy.
10.Serve along with buns,fries and coleslaw.

Coleslaw

Coleslaw is a mixed salad of cabbage and carrot.

Ingredients:

1c Chopped Cabbage
1/2c Chopped Carrot
1tbsp Mayonnaise
1 1/2tbsp Yoghurt
1tsp Sugar
Salt as required

Method:

Mix all the ingredients together and serve as a salad.
