Molten Chocolate Cake

This cake is made in a large cup cake tray or can be made in individual bowls.......I made in large cup cake liners of 12 cm the size can be little more also.This is chocolate cake filled with hot chocolate fudge topped with vanilla ice cream and ice cream topped with chocolate syrup.....really yummyyy and the taste of chocolate hmmmmmmm!!!!!




































Ingredients:

2c All purpose flour
1/2c Cocoa powder
1c Powdered sugar can use little more also
1c Butter room temp
2tsp Baking powder
1tsp Vanilla essence
3 Eggs room temp
1/2c Milk

For chocolate Fudge:

150g Cooking chocolate
2tbsp Butter
4tbsp Brown Sugar

For Topping:

Vanilla Ice cream
Hersheys Chocolate syrup


















Method:

Step 1:

1.Sieve the flour,baking powder and cocoa powder and keep aside.
2.In a bowl beat the butter and sugar till fluffy.
3.Add eggs one by one to this mixture and beat well after each addition.
4.Now add the vanilla essence and mix well.
5.Add the flour and fold in the flour to the egg mixture slowly by adding milk in between.
6.Preheat the oven at 00 deg C for 15 mins.
7.Line up the muffin tray or grease the muffin tray and pour the batter 3/4 of each muffin.
(I used disposable aluminium muffin cups so i used cup cake liners and peeled it after baking).
8.Bake at 180 deg C for 20 to 25 mins or the till the cakes are done.
9.Allow it to cool.

Step 2:

1.For chocolate hot fudge double boil the ingredients for the fudge.
2.Till it is fully melted.
3.Pour into a clean jar.
4.This can be stored in fridge for many weeks.
5.When needed just MV till it melts.



















Step 3:

1.When the cakes are cooled if using liners peel of the liners carefully.
2.Then cut out the small dome of each cake.
3.Invert the cake and keep on a plate.
4.With a small knife cut a small round in middle of the cake almost till the bottom and scoop of the cut portion.
5.Pour the hot fudge to this holes.
6.You can left it open as it is or can just close it with the cut pieces of cakes.
7.Refrigerate this.
8.While serving MV this for few seconds till the fudge just bubbles.
9.Now top this with a large scoop of vanilla ice cream.
10.Top the ice cream with hersheys chocolate syrup or you can use the hot fudge itself.
11.Enjoy the molten chocolate cake!!!!!!!!!!

Prawns Masala

This is an easy way to make prawns...........and really tasty one.This will go well with kubus and rice.



















Ingredients:

1kg Prawns
1big Onion
10 to 15 Shallots
1big Tomato
5cloves Garlic
1medium piece Ginger
1 1/2tsp Coriander powder
1tsp Chilly powder
1/2tsp Black pepper powder
1/2tsp Fennel seeds powder
1/2tsp Turmeric powder
1/2tsp Garam masala powder
1/2tsp Tamarind pulp
1/2 to 3/4c Thick coconut milk
Salt

For Tempering:

Coconut oil
Mustard Seeds
Fenugreek Seeds
Curry Leaves



















Method:

1.Clean the prawns well and keep aside.
2.In a kadai pour 2tbsp oil and splutter mustard seeds and fenugreek seeds.
3.Add curry leaves.
4.Add the sliced onions and shallots and saute till light brown.
5.Add the finely chopped ginger and garlic.
6.Saute well and add all the dry powders and salt.
7.When the raw smell goes away add the sliced tomato.
8.When the tomatoes are done add the tamarind pulp and coconut milk.
9.Let it boil for minute.
10.Now add the cleaned prawn to the masala and mix well.
11.Let the prawns get cooked in the masala.
12.If the is more gravy put it on medium heat and let the masala to be dry or semi gravy as per your wish.
13.Add more curry leaves and if neede more spicy sprinkle some more pepper powder.
14.Serve hot with chappathis,kubus or rice.

Bhindi Masala

This is an easy and tasty veg dish for a busy day........and those who don't like veg dishes will surely love this...........this is one of my hubby's fav veg dish.........this have a nice aroma of kasuri methi...

Now to the dish......



















Ingredients:

1/2kg Bhindi/Okra/Lady's finger
2medium Onions
1large Tomato
5cloves Garlic
1medium piece Ginger
1tsp Coriander powder
1tsp Red chilly powder or more as requirement
1/2tsp Turmeric powder
1/2 tsp Garam Masala powder
1/2tsp Cummin seeds
1/2tsp Kasuri methi
Coriander laeves
Salt
Oil


















Method:

1.Wash and dry the bhindis.
2.Cut into 1 inch sized pieces.
3.Heat some oil in a kadai and deep fry this bhindis till slightly crispy.
4.Drain out the excess oil.
5.In another kadai pour 2tbsp of oil.(Can use the oil used for frying)
6.Splutter the cummin seeds.
7.Add the sliced onions and saute till light brown.
8.Add the chopped garlic and ginger and saute well.
9.Now add the chilly powder,coriander powder,turmeric powder and garam masala powder and mix well.
10.When the raw smell goes add the sliced tomatoes and saute well.
11.Now add the fried bhindis and mix well in this masala.
12.Close the lid and cook at medium heat for 5 to 8 mins.
13.After that add the kasuri methi and coriander leaves.
14.Serve hot with chappathis or even with plain rice.

Mango Cake To Celebrate My 1st Blog Anniversary!!!!!!!!

OMG!!!can't believe that I'm blogging for 1 year......feels really happy at this moment.....last yr this day I just put up my some recipes and pics just as to keep it as my diary but today blogging has become a part of my daily life as all other bloggers.......

I got many new and good friends around here........and now I completed one yr just because of your support and your lovely comments gave me more encouragement to keep on cooking.........
Thanx a lot to my family,relatives,friends and special thanx to all of my blogger friends..........and looking forward for more support from u all.........

And this is a seaso of mangoes here and thought to make a mango cake to celebrate my blog annivesary.........this cake was so moist and tasty......and like me many are mango lovers.....i'm crazy for mangoes........hehehe!!!!!!

Now we can enjoy the taste of mango hmmmmmmm!!!!!!





















Ingredients:

1 3/4c All purpose flour
1 to 1 1/4c Powdered sugar
1 1/2tsp Baking powder
3 Eggs room temp
1/2c Butter roomtemp
1/2c oil
1c Fresh mango puree
1/2tsp Vanilla essence
1/2tsp Mango essence(optional)

For Frosting:

1/2c Cream cheese
3tbsp Softened butter
1c Icing sugar
1/2tsp Mango essence
1/2c Fresh mango puree
Mango slices for decorating



















Method:

1.Sieve dry ingredients and keep aside.
2.In a bowl beat oil,butter and sugar till creamy.
3.Add eggs one at a time and beat after each addition.
4.Add the both essences.
5.Now mix the flour mixture slowly in to batches.
6.Fold in the flour mixture by adding the mango puree in between.
7.Mix well till all the flour is incorporated well.



















8.Preheat the oven at 200 degree C for 15 mins.
9.Grease a cake tin pour the batter to the tin.
10.Bake the cake at 180 degree C for 40 to 45 min or till the tester inserted comes out clean.
11.When the cake is done allow it to cool on wire rack.
12.Now for frosting mix all the ingredients till spreading consistency.
13.When the cake is cooled completely spread the frosting on top an on the sides of the cake and smooth it.
14.Decorate with some pieces of mangoes.Let it sit in the fridge for sometime.
15.Slice and enjoy with a cup of coffee or tea!!!!!!!!!!
