Lychee Cake

This is an easy and simple cake with lychee flavor.Sponge cake filled with fresh lychees.The cake was so soft and lychee gave a nice flavor to the cake.


Ingredients:

3 Large Eggs
1/2 to 3/4 C All purpose flour
1tbsp Cornflour
1/2 to 3/4 C Granulated Sugar
1/2tsp Vanilla essence
1/2tsp Baking powder
2tsp Melted Butter
A pinch salt

For Frosting:

3 Sachet dream whip powder
1/2 to 3/4 C Cold milk
1/2tsp Vanilla essence

For Lychee Syrup:

8 to 10 Fresh Lychees
2tsp Sugar
1/4C Water

For Pralines:

1 C Sugar
1 C Almond and Cashewnuts Mixed


Method:

1.Beat the egg and sugar till very creamy and pale.
2.Sift the flours,baking powder and salt and keep aside.
3.Add Vanilla essence to the beaten egg.
4.Now slowly add the flour mixture to the egg mixture and fold in with big strokes.
5.Fold in till all the flour is mixed with the egg mixture.
6.Now add the melted butter and just give some strokes.
7.Grease a cake tin and line with parchment paper.
8.Preheat the oven at 200 degree C for 15 mins.
9.Now pour the batter to the tin.
10.Bake the cake at 165 degree C for 15 mins or till the tester comes out clean.Allow the cake to cool completely.


11.Toast the almonds and cahewnuts lightly.
12.In a pan caramelize the sugar till brown.
13.Add the toasted almonds and cashews to this caramelized sugar .
14.Grease an aluminium foil and pour this to it and cover this.
15.Allow it to cool completely.
16.When it is cooled powder this with a rolling pin or use the grinder.
17.It should not be very fine powder.Keep this aside.
18.Now whip the dream whip powder with cold milk till fluffy.
19. Add the vanilla essence to this.
20.Now in another pan add the deseeded and sliced lychees,sugar and water.
21.Let it boil till the lychees are soft.
22.Off the flame and let this also cool down.
23.Now cut the cake into to portions.
24.In one portion brush with the lychee syrup.
25.Spread a big spoon full of whipped cream.
26.Top the cream with the lychees.
27.Now cover this with other half of cake.
28.Now cover the cake with whipped cream.
29.Put the pralines all over the cake and on the sides of the cake.
30.Garnish with some pieces of lychees.
31.Keep it refrigerated till set.
32.Slice and Enjoy!!!!!!

  3. A cake with lychee!!! I just can't dream of that and here is has come out true even. The cake looks perfect, just perfect in each and every way. I wish I could grab a piece rt away..
