Strawberry Mousse Cake

Hi all...This dish is for this month the theme for Bloggers Monthly Fiesta s pink color .... as all know october is a month of Breast Cancer Awareness.All women should be aware of their health,,,now a days this is a big issue....

This is a tasty dessert...

Now to the recipe....



















































Ingredients:

For Sponge Base:

3 Large Eggs
1/2 to 3/4 C All purpose flour
1tbsp Cornflour
1/2 to 3/4 C Granulated Sugar
1/2tsp Vanilla essence
1/2tsp Baking powder
2tsp Melted Butter
A pinch salt

For Strawberry Mousse:

1 1/2 tbsp Gelatine
1/4 c Water
1 pckt Whipping Cream
3 to 4 tbsp Sugar
1 c Fresh Strawberry puree

For Topping:

1/2 C Strawberry cubes
1/4 C Sugar
4tbsp Water


























Method:

Sponge Cake:

1.Beat the egg and sugar till very creamy and pale.
2.Sift the flours,baking powder and salt and keep aside.
3.Add Vanilla essence to the beaten egg.
4.Now slowly add the flour mixture to the egg mixture and fold in with big strokes.
5.Fold in till all the flour is mixed with the egg mixture.
6.Now add the melted butter and just give some strokes.
7.Grease a cake tin and line with parchment paper.
8.Preheat the oven at 200 degree C for 15 mins.
9.Now pour the batter to the tin.
10.Bake the cake at 165 degree C for 15 mins or till the tester comes out clean.Allow the cake to cool completely.

Strawberry Mousse:

1.In a bowl beat the whipping cream and sugar till stiff peaks appear.
2.Soak the gelatine in water for 10 mins.
3.Double boil this gelatine and mix this to the whipped cream mixture.
4.Add the strawberry puree to this cream mixture and mix well.
5.Keep this in the fridge for a while to get cooled.

For Strawberry Topping:

1.Heat the ingredients for topping in a pan and boil.
2.cook till strawberries are soft.
3.Let it cool.


Assembling The Cake:

1.Cut the cake into two equal parts.
2.Now in a springform pan line a cling film.
3.Now layer one piece of cake in the tin.
4.Pour half of this whipped cream mixture on top of the cake.
5.Now layer the other piece on top of the cream.
6.Now pour the rest of cream mixture on top of this cake.
7.Just tap the tin so that the cream spread evenly to every sides.
8.Top with the strawberry topping.
9.Keep this refrigerated for sometimes.
10.Cut and enjoy when set.

Nuts And Fruits Bar

Hi friends, a post after a long gap.I'm there in a group of bloggers called Blogger Monthly Fiesta.This month the ingredient is "Nuts".I think this recipe is correct choice for this.This is very healthy and tasty bars...Kids who don't like nuts,they will easily eat this bars like how they eat chocolate bars....Even adults like this bars...

Now to the recipe..



























































Ingredients:

1 1/2 C Mixed nuts(Walnuts,Almonds,Pecans,Pistachios)
1/2 C Mixed dried fruits(Apricots,Dried Blueberries,Dried Cherries,Raisins)
130 grms Dates without seeds
55 grms Chocolate Chips
1/4 C Desicated Coconut
1/4 C All purpose flour
1/4 tsp Baking soda
1/4 tsp Salt
2 tbsp Honey
1/4 C Brown Sugar
1 Egg Or 3 tbsp Buttermilk
1/2 tsp Vanilla essence
100 grms White Chocolate 


























Method:

1.Preheat oven at 180 degree C .
2.Line a square baking sheet with aluminium foil and grease with butter.
3.Chop the nuts and fruits.
4.Mix the nuts,chocolate chips,desicated coconut and dried fruits with flour,baking soda,salt and brown sugar.
5.In a bowl beat well egg with vanilla essence and honey.
6.Mix this egg with nuts and fruits.
7.Spread this evenly in the prepared tin.
8.Bake this at 165 degree C for 25 to 30 min.
9.The centre will be soft and edges will be slightly crispy.
10.Cool it completely.
11.Melt the white chocolate by double boiling method.
12.Spread this over the cooled large bar.
13.Refrigerate this till the chocolate sets.
14.Invert this and cut into bars.
15.Enjoy the delicious bars...

Uzbul Zainab Or Sweet Cheese Rolls Guest Post For Yummy Food


Hi friends, this post I should have posted on 2nd July.This is the 3rd year I'm doing the guest post fo r her yearly Ramadan Event Joy From Fasting To Feasting VIII. 


Thank You Lubna of Yummy Food for giving me the chance to do the guest post this year too. 

This year I'm posting an arabic sweet Uzbul Zainab means zainab's finger.





Ingredients:

1 Pkt Samosa sheet
10 pc Triangular Cheese
Oil for frying
Maida and water mix for sticking the edge

For Sugar Syrup:

1C Sugar
3/4c Water
1/2tsp Rose water 
1/4tsp Cardamom powder
1/2tsp Lime juice



Method:

1.Defrost the samosa sheets.
2.Cut the triangle cheese into pieces.
3.Now in a in a pan boil the sugar and water till it becomes thick syrup.
4.Now add cardamom powder,rose water and lime juice.
5.Now take out each samosa sheet keep a pc of cheese on one small end of the sheet.
6.Cover it with the small ends and roll it to a small log.
7.Stick the end with maida paste.
8.Do the same with rest of the sheets.


























9.Heat oil in a pan.
10.Fry this rolls in the oil till golden brown.(The cheese should be covered well otherwise it will melt in hot oil and if it oozes out it will splutter in the oil.So be careful of that).Drain out the excess oil.
11.Now dip each roll in the syrup and coat well and place on a plate.
12.Enjoy the rolls...

Blondies To Celebrate My 5th Blog Anniversary!!!!!

Ramadan Kareem To All!!!

My blog turned 5 yrs on this June 7th...Actually I had some issues with my blog so I couldn't post my recipe..I'm so happy to say that this won't be possible without the support of my family ,relatives and u friends.
Today I'm posting strawberry and almond blondies...






























































Ingredients:

100g Unsalted Butter
150g White chocolate
110g Sugar
2 Eggs
130g All purpose flour
100g Fresh Strawberries (u can use any berries like raspberry ,blueberry etc)
100g Almonds chopped






































Method:

1.Grease a brownie tin and keep aside.
2.Preheat the oven at 200 degree C for 10 mins.
3.In a bowl double boil and melt the butter and half of the white chocolate.
4.In another bowl whisk eggs and sugar till thick.
5.Now add the flour and  butter and chocolate mixture to this and mix well with a spatula until smooth.
6.Now add the chopped strawberries and remaining white chocolate.
7.Pour this to the prepared tin.



























8.Now bake this at 180 degree C for 30 to 35 mins till a light brown crust has appeared on top.
9.They will be slightly squidgy inside.
10.Cool it completely before slicing.
11.Slice into pieces and enjoy!!!

Meringue Cookies

Hi friends ...Again a late post..Was really busy for many days.Hope all r fine..
Today I'm posting meringue cookies...This is kids favorite...With just 3 ingredients we can make this cookies...

Now to the recipe...



Ingredients:

4 Egg Whites(room temp)
1c Powdered Sugar
1tsp Vanilla essence
A pinch of salt
Red color (optional)
1tsp Rose water for flavoring


Method:

1.In a bowl start beating the egg white in high speed.
2.While beating add salt.
3.Then start adding powdered sugar 1tbsp at a time.
4.Keep on beating till very stiff peaks appears.
5.Add the vanilla essence at this stage and beat well.
6.If using color and rose water add at this stage.
7.Now fill the piping bag attached with any of your favorite nozzle.


8.Preheat the oven at 150 degree C for 15 mins.
9.Line the baking trays with parchment papers.
10.Pipe out the meringues to the prepared trays.
11.Bake at 150 degree C for 30 mins or till it is not sticky while touching.
12.Off the oven and keep open the door of the oven for another half an hour.
13.Let the meringues rest inside the oven.
14.When cooled completely peel it and store in air tight containers.
15.Enjoy the meringue cookies....

Falafel

Falafel is an arabic fried dish made with chickpeas....This is my first try and I'm happy with the result..This is actually a healthy dish, u can even bake or air fry this to avoid deep frying.

Now to the recipe...
































































Ingredients:

1c Chick peas Soaked
1/2c Fawa Beans Soaked
1c Parsely
3/4c Coriander leaves
1/4c Mint leaves
5 to 6 cloves Garlic
1 Onion
1tsp Coriander powder
1/2tsp Cumin powder
1/2tsp Pepper powder
1tbsp Bread crumbs
1tbsp All purpose flour
1/2tsp Baking powder
1/2tsp Baking soda
Salt
Oil for frying


























Method:

1.Soak the chick peas and fawa beans separately at least 12 hrs or overnight.
2.Coarse grind the beans well.
3.Now grind the parsely,coriander leaves,mint leaves,onion and garlic to a fine paste.
4.Add this to the grinded beans and mix well.
5.Add the powders and spices to this and mix well.
6.Keep this aside for 15 mins.
7.Now heat oil in a kadai.


























8.Now shape this to small vadas and fry in the oil till its dark brown and inner part is cooked.
9.Drain the excess oil.
10.Serve hot with tahina sauce,hummus with pita bread or any roti.

Magic Cake

Hi Friends...Again after a few weeks posting a recipe and first post of this year...Hope all are having a great new year..
Today I'm posting the magic cake. Like name this cake is really a magic cake. With one batter we get a three textured cake. Bottom is slightly chewy, middle layer is custard texture and top layer is a sponge cake.The mixing of the batter gives this layers...

Now to the magic recipe..


































Ingredients:

115grm All purpose flour
150grm Sugar
125grm Butter(melted)
4 Eggs seperated
2c Milk(luke warm)
2tbsp Water
2tsp Vanilla essence
Strawberry and Icing sugar for garnishing

























Method:

1.In a bowl beat egg whites till stiff peaks.
2.In another bowl beat the egg yolks,sugar,water and vanilla essence.
3.Beat well till creamy.
4.Now add the flour and mix well.
5.Add the luke warm milk and mix well.
6.Now fold in the egg white to this slowly.
7.The batter will be thin and little lumps will be there.


























8.Grease a baking tin,Preheat the oven at 200 degree C for 15 mins.
9.Bake the cake at 180 degree C for 45 mins or till done.
10.Cool the cake in the tin for 2 to 3 hrs.
11.Sprinkle icing sugar and garnish with strawberries.
12.After the cake is cooled completely cut and serve.
