This is a cake with full flavour of coconut.......this I made for my son's b'day.This was really soft too.Kids too loved it so much.....
Now to the cake:
Ingredients:
2c all purpose flour
1c Powdered sugar
3 Eggs
1 1/2 tsp Baking powder
1/2c Butter
1/2c Oil
1 tsp Vanilla essence
1/2 to 3/4c Thick coconut milk
1/2c Dessicated coconut
For Icing:
3sachets Dream whip powder
2tbsp Cream cheese
1tbsp Coconut milk powder
1/4c Cold milk or water
1/2tsp Vanilla essence
1tbsp Dessicated coconut
Any food colour as your wish
Method:
1.Sift flour and baking powder and keep aside.
2.In a bowl beat butter,oil and sugar till creamy.
3.Add eggs one by one to this mixture and beat well after each addition.
4.Add vannilla essence and mix well.
5.Add the flour mixture to this and fold in with a wooden spoon.
6.In between add coconut milk little and mix.
7.After the whole flour mixture is added and the batter is too thick ad coconut milk and make to consistency of a cake batter.
8.Now add the dessicated coconut and mix well.
9.Preheat the oven at 200 degree C for 15 mins.
10.Grease a cake tin and pour the cake batter to the prepared cake tin.
11.Bake this at 175 degree C for 35 to 40 mins or till the inserted tester comes out clean.
12.When the cake is done cool it on a wire rack.
13.Now for icing in a bowl put the dreamwhip powder and coconut milk powder and add the cold milk and beat witha beater till peaks appears.
14.If the cream is so stif add little more cold milk and beat well.
15.Add the cream cheese and beat well.
16.After the cake is cooled completely cut the cake into 2 halves.
17.Spread some icing on one side of the cake and keep the other portion on top of this.
18.Now spread the cream on top and sides of the cake.
19.Now in rest of the cream add any colour of your wish and decorate.
20.Srinkle the dessicated coconut on sides of the cake.
21.Keep refrigerated for couple of hours.
22.Slice and enjoy!!!!!!!!!!
