Upside Down Pineapple And Coconut Cake And An Award

This cake is soooooo soft and moist………..and the flavor of pineapple and coconut was a real combination…….my hubby and my friends really loved this cake………..

This may be my last post of this year ,because will be busy with packing and all.Shifting to new house......So advanced Wishes to all.......Merry Christmas And A Happy New year to all.Have a great year ahead and god bless everybody........See u all next year........



















Ingredients:

2c All purpose flour
¾ c Powdered sugar
3 Eggs room temp
1c Butter room temp
1tsp Pineapple essence
1½ tsp Baking powder
½ c Chopped pineapple
½ c Dessicated coconut
½ c Syrup of tin pineapple


For Layering:

1 tin Pineapple rings
1tbsp Brown sugar
1tbsp Dessicated coconut
10 pieces Cherries




















Method:

1.Sieve flour and baking powder.
2.In a bowl beat butter and sugar till creamy.
3.Now add each eggs one by one beating well after each addition.
4.Now add the essence and mix well.5.Now add the flour and tin syrup and fold in slowly till it is fully mixed well.



















6.Now add the chopped pineaaple pieces and desicatted coconut.
7.Now grease a cake tin sprinkle brown sugar and dessicated coconut.
8.Now place pineapple rings to cover the bottom and place one cherries in the holes.
9.Preheat the oven at 200 deree C for 20 mins.
10.Bake the cake at 175 degree C for 45 mins or till the tester comes out clean.
11.Serve warm or cooled.

Chilly Gobi

Cauliflower is not that much fav veg of mine……….but sometimes its really good to have some curries or dry fries of cauliflower.In this I just added some cashews also which gave the curry a good taste.
Now we shall go to the recipe…..




















Ingredients:
1 big piece Cauliflower
1 Onion
1 Tomato
4 Cloves Garlic
1 Small piece Ginger
½ tsp Cummin seeds
1tsp Kashmiri chilly powder or more
½ tsp Turmeric powder
5 Cashew nuts
Coriander leaves
Salt
Oil


















Method:
1.Break the cauliflower into small florets.
2.Put this in hot water with turmeric powder.
3.Drain the water after 10 mins.
4.In a kadai heat oil and shallow fry the cauliflower til slightly crisp.
5.Drain out excess oil.
6.Now in the same oil splutter cummin seeds and sauté chopped onions.
7.When the onion turn to transparent and the chopped garlic and ginger.
8.Saute well and add the broken cashewnuts.
9.When this is fried andd the chilly powder and turmeric powder and sauté well.
10.Add the chopped tomatoes and mix well till the tomatoes are soft.
11.Now add the cauliflower and salt and mix well.
12.Close the lid and cook in sim till the mixture is dry.
13.Garnish with coriander leaves.
14.Serve hot with chapathis.

Moru Curry

This is a simple and tasty curry for rice…….healthy also.In moru kachiyathu we don’t use any vegetables.In this curry we use vegetables like chena,chembu and kumbalanga etc….
Now we’ll go to the recipe…..




















Ingredients:
½ kg Chena,chembu or kumbalanga or mix of these vegetables
3 Green chillies
½ tsp Turmeric powder
½ tsp Red chilly powder
1 c Curd
½ c Grated coconut
¼ tsp Cummin seeds
¼ c Water
Salt
For Tempering:
Oil
Mustard seeds
Fenugreek seeds
2 Whole red chillies
Curry leaves


















Method:
1.In a vessel put the cleaned and cut vegetables.
2.Add the turmeric and red chilly powder and salt.
3.Pour some water and cook till the pieces are soft.
4.In the blender put curd,grated coconut,cumin seeds and water and blend till the mixture is very smooth.
5.Pour this to the vegetables and mix well.
6.Now heat oil in a small pan and add mustard seeds and fenugreek seeds.
7.When it starts spluttering put the whole red chillies and curry leaves.
8.Pour this over the curry.
9.Serve hot with plain rice and pappadam.

Swiss Roll

Swiss rolls are something we think very difficult to make…..but its really easy.I didn’t have a bigger tray to make the sponge cake.So I made two small sized ones.Will try in a bigger tray next time.We can use any type of filling in this with jams,whipped cream etc.



















Ingredients:

3 Eggs
½ c All purpose flour
¼ c Sugar
¼ c Water
¼ tsp Baking powder
¼ tsp Vanilla essence


For filling:

1pkt Whipped cream powder
1pkt Caramel powder
¼ c Cold milk
1tbsp Grated chocolate
¼ tsp vanilla essence


















Method:

1.In a bowl beat eggs and sugar till creamy and fluffy.
2.Mix flour amd baking powder to this mixture and mix with a metal spoon slowly.
3.Add the water slowly and mix.
4.Grease a flat baking tray or line with parchment paper.
5.Pour the batter to the tray.
6.Preheat the oven at 180 degree C for 15 mins.
7.Bake this at 165 degree C for 8 to 10 mins or till light brown shade appears.
8.Allow it to cool.
9.In a bowl beat the caramel powder,whipcream powder and cold milk with vanilla essence till fluffy.

















10.Turn over the sponge cake and apply the cream and slowly fold the cake to form a log.
11.Grate some chocolate over it.
12.Cut into pieces and serve

Vellappam

Famous breakfast item for keralites……tasty and easy appam…..This goes very well with vegetable stew,egg roast,chicken curries and even fish moli…….here we all like vellappam, we love to have appam with fresh coconut milk and sugar…….


















Ingredients:
2c Raw white rice(Pachari)
1c Grated coconut
¾ c Cooked rice
Coconut water of one coconut
1tsp Yeast
2tsp Sugar
Water
Salt


















Method:
1.Soak raw rice for 4 hrs or overnight.
2.Grind soaked rice,grated coconut, cooked rice and sufficient water in a grinder.
3.Warm the coconut water and add sugar and yeast and keep aside.
4.When the batter should be pourable consistency.
5.Now add the yeast mixture to the batter and mix well and close with a lid and keep for fermemtation.
6.It will take 6 to 8 hrs to ferment and will less or more time due to weather.
7.Now after fermentation add salt and mix with a spoon.
8. Heat a appa chatti and pour a spoonful of batter and rotate the chatti.



















9.Close the lid of the chatti and cook the appams.
10.When it is fully cooked take it out from the chatti and serve in a plate.
11.Serve along with any curry.

Mixed Salad

Again had to take a small break…….the climate change made my health so bad………what to do so that I had to stay away from blogging for few days…………hope you all do well……….
I’m back with a healthy and easy salad for anytime of the day………




















Ingredients:
5 Leaves of lettuce
2 Cucumber
1 Big Carrot
1 Mediem piece of purple cabbage
1 Big Pomegranate
For Seasoning:
2tbsp Lime juice
1tbsp Oats
1tbsp Olive oil
Salt
Pepper powder
Fried kubus


















Method:
1.Chop the vegetables into small pieces and put in a bowl.
2.Put the seeds of pomegranate with vegetables.
3.While serving add the oats,lime juice,salt,olive oil and pepper powder and mix well or can use your on dressing also.
4.Put some fried kubus on top.
5.Serve with a bowl of soup or any other meal.

Egg Curry

Very simple curry for chapathis, kubus and even for rice…………..easy and fast dish and tasty too.Eggs are my kids fav so they like eggs curries very much……….




















Ingredients:

4 Eggs
2 Onions
1 Tomato
4 Green chillies
½ tsp Turmeric powder
¾ tsp Red chilly powder or more as per taste
½ tsp Fennel seeds powder
1½ c Thick coconut milk
Salt
Oil
Curry leaves



















Method:
1.In a pan heat oil and sauté sliced onions till it slightly changes color.
2.Now add slited green chillies and curry leaves.
3.Add the turmeric and red chilly powders and sauté well.4.Now add the sliced tomatoes and salt and mix well till tomatoes becomes soft.
5.Now break each eggs to this mixture slowly without breaking the yolk.
6.Now put the flame into medium and close the lid.
7.After 5 mins open the lid and the yolk will be cooked and just turn over the yolks one by one and cook the other side also.
8.Now add the coconut milk and fennel seeds powder and mix well.
9.Garnish with some more curry leaves .
10.Serve hot with kubus,bread,chappathi or rice.

Chilly Chicken (Kerala Style)

This is a simple dish……….in my childhood days when we go to any Indian restaurant we used to get like this style chilly chicken when we order this.After having Chinese chilly chicken I understood there are other styles too……….so I thought I’ll make the simplest form and it is so easy too……..



















Ingredients:

1kg Chicken shredded
1 Big onion
1 Tomato
5Cloves Garlic
1 Medium piece ginger
½ tsp Turmeric powder
1 tsp Red chilly powder
½ tsp Garam masala powder
½ tsp Coriander powder
2 Green chillies
Salt
Oil
Curry leaves




















Method:

1.If using full chicken boil it and shred it without bones or use boneless chicken.
2.Now in a pan heat oil sauté chopped onions and curry leaves.
3.When it turns pink in color add the ginger garlic paste and mix well.
4.Now add the red chilly powder,turmeric powder,coriander powder and garam masala powder and sauté well.
5.Now add chopped tomatoes and mix well.
6.Now add shredded chicken and mix well till it is crispy and dry.
7.Off flame and serve hot.This can be used as filling for sandwich.

Tuna Sandwich

Another easy sandwich for a breakfast or dinner………………I use tuna for making pastas or make masala for kubus or chapatti.This was really tasty as a filling for sandwich…………………



















Ingredients:
3 Slices bread
1 Tin tuna
Carrot grated
1 Onion chopped
Pepper powder
Mayyonaise
Lettuce

For Applying:

Mayyonaise
Ketchup


















Method:
1.In a bowl mix tuna crushed,2tsp mayonnaise,pepper powder as per taste,grated carrot,finely chopped onions and mix well.
2.Toast the bread slices in a toaster or on a tawa.
3.In a bread spread the tuna mixture.
4.Close with another slice of bread.
5.Now apply a little mayonnaise on the bread keep lettuce leaves.
6.Now apply some ketchup on the last piece of bread and keep over the lettuce.
7.Press this in a sandwich maker or heat on a tawa.
8.Cut and serve hot.

Carrot Cake My 100th Post !!!!!!!!!!!!!!!!!!

Hi friends back to my blogging world after some days…………..really missed u all……actually was not well and couldn’t sit for blogging…………now feeling better and I’m back…………and happy that I’m back with my 100th post.Can’t believe within some months I reached 100th post soooooooooo happy that I can’t express.When I started I was not sure whether all will accept or shall I stop in between but I really want to thank my hubby who gave me a real support and my relatives,friends and my dear fellow bloggers who encouraged me with their valuable comments………….
Now to the recipe this is not a new cake but very tasty and moist………carrots are everybodys fav and good for health so for kids those who doesn’t have carrots raw can make something like this and make them eat isn’t it…………..when I told my daughter I’m going to make carrot cake she told why to make with carrot u make chocolate cake and I told just taste it and say……………after tasting she told this tastes really nice and my 3 kids loved it so much……………





















Ingredients:

2c All purpose flour
1c Powdered sugar
2 Eggs room temp
1½ tsp Baking powder
½ c Oil
½ c Butter room temp or can use full oil also
1tsp Vanilla essence
½ c Milk
2 Medium sized Carrots grated

For frosting:

2 Sachets Dreamwhip
¼ c Cold milk
½ tsp Vanilla essence




















Method:

1.Sieve flour and baking powder and keep aside.
2.In a bowl beat powdered sugar ,butter and oil.Beat well till creamy.
3.Now add the eggs one by one beating after each addition.
4.Add the vanilla essence and mix well.
5.Now add the flour slowly and fold in.
6.Add milk in between adding the flour to make the batter little loose.
7.Now add the grated carrots and mix slowly to spread everywhere in the batter.
8.Preheat the oven at 200 degree C for 15 mins.
9.Grease a cake tin and pour the batter into the tin.
10.Bake the cake at 180 degree C for 45 to 40 mins tester comes out clean.


















11.Allow the cake to cool well.
12.In a bowl add the cold milk and dreamwhip powder and whip well till creamy.
13.Apply this over the cake.
14.Cut and serve.

Dal Palak

This is an easy curry for rice and chapathi………..and very healthy too……after having non-veg for sometimes we like to have total veg foods……..so those days I prepare like this curries……….



















Ingredients:

1c Masoor dal
2 Medium bunches Palak
3 Cloves garlic
2 Green chillies
1 Tomato
1tsp Red chilly powder
½ tsp Turmeric powder
1c Thick coconut milk
Salt
Water
For Tempering:
Oil
Mustard seeds
2 Whole red chillies
Curry leaves


















Method:
1.First cook the dal with sufficient water.
2.Add the chopped palak,turmeric powder,red chilly powder,green chillies,sliced tomatoes,sliced garlic and salt.
3.Boil this till the palak is cooked.
4.Now add the coconut milk and just boil.
5.Heat oil in a pan add the mustard seeds.
6.When it starts spluttering add the whole red chillies and curry leaves.
7.Pour this over the curry.
8.Serve hot with rice or chapathis.

Broken Wheat Payasam

My hubby’s ever fav payasam this is………….when ever I ask him what payasam to make he first says this one………this is very easy and even lil healthy I say because not sugar is used jaggery is the one used in this for sweetness and coconut milk is also there………….and wheat is always good………..



















Ingredients:
1c Broken Wheat
2c Melted jaggery or more as required
2c Thin coconut milk
2c Thick coconut milk
2tsp Cardamom powder
Ghee
Broken cashewnuts
Raisins


















Method:

1.Pressure cook wheat with sufficient water.
2.In a pan melt jaggery with little water.
3.After melted strain this melted jaggery to cooked wheat.
4.Keep this on the flame and boil it till it is mixed well and thickens.
5.Add little ghee and cardamom powder while stirring.
6.Add thin coconut milk and keep on stirring till it thickens.
7.Add thick coconut milk and just boil.
8.If it gets thick again add little more coconut milk.
9.Heat ghee in a pan roast the cashews and raisins and pour over the payasam.
10.Serve hot or cold

Thakkali Chamanthy

This is an easy chamanthy for idli and dosa……..with very less ingredients which is always available in our kitchen…………..



















Ingredients:
1 Big onion
2 Medium tomatoes
1 Small piece Ginger
¼ tsp Turmeric powder
½ tsp Red chilly powder
Salt
Oil

For Tempering:

Oil
Mustard seeds
2 Whole red chillies
Curry leaves



















Method:

1.Heat oil in a kadai and sauté chopped onion in it.
2.When it is transparent add chopped ginger and mix well.
3.Add the turmeric powder and redchilly powder and sauté well.
4.Now add the chopped tomatoes.
5.When the tomatoes are soft add salt and off the flame.
6.Let this cool for sometimes.
7.Grind this mixture in a mixer.
8.Heat Little oil in a pan.
9.Put the mustard seeds,when this starts spluttering add the whole red chillies and curry leaves.
10.Add the grind mixture to this and mix well and sauté till the water evaporates and the mixture thickens.
11.Serve with idlis or dosas.

Banana Cake With Chocolate Chips

This is a simple cake and tasty too………….bananas are all time fav of my family so I used think what to make different dishes with bananas…….this cake was so moist also……..and the chocolate chips in between gave a great taste too.............



















Ingredients:

2c All purpose flour
2tsp Baking powder
2 Eggs
3 Bananas Mashed
½ c Powdered sugar
1c Butter or oil
1tsp Vanilla essence
½ c Chocolate chips
½ c Milk


















Method:

1.Seive the baking powder and flour and keep aside.
2.In a bowl beat sugar and butter or oil.
3.Now add eggs one by one and beat well after each addition.
4.Add vanilla essence and mix well.
5.Now slowly add the flour and milk and beat well.
6.Now add the mashed bananas and mix well.
7.Add the chocolate chips and mix.
8.Preheat the oven at 200 degree C for 15 mins.
9.Grease a loaf tin and pour the batter in it.
10.Bake in the preheated oven at 180 degree C for 45 mins to 1 hr or till it is fully done.
11.Allow it to cool.Cut into slices and serve.

Pumpkin Coconut Milk Curry

Hi friends, back after some busy days to normal days…………so thought of posting some easy dishes……….
Before going to the recipe,there is a participation certificate from akila for participating in her event Dish name starts with :A….Thanx akila………..




Now to the Recipe..................



















Ingredients:

½ kg Pumpkin
½ c Masoor dal or toor dal
½ tsp Redchilly powder
¼ tsp Turmeric powder
2 Green chillies
1c Thick coconut milk
Water
Salt

For Tempering:
Mustard seeds
2 Whole red chillies
Curry leaves
1tbsp Oil


















Method:

1.In a vessel put dal and water and bring to boil.
2.When the dal is cooked add the pumpkin pieces,green chillies,redchilly powder,turmeric powder and salt.
3.When the pumpkin is cooked and soft add the coconut milk and just bring to boil.
4.Off the flame.
5.In a pan heat oil add the mustard seeds when it starts spluttering add the whole red chillies and curry leaves.
6.Pour this over the curry.
7.Serve hot with plain rice.
