Mocha Brownies

Hi friends!!!! Today i'm posting mocha brownies.Combination of chocolate and coffee which is out of this world.The smell which spreads the home while baking anything with this combo is really amazing!!!!!!!
My all time fav combo.

Now to the recipe.......




































Ingredients:

3/4 c Unsalted butter
3/4 c Semi sweet chocolate chips or cooking chocolate
2 tsp Instant coffee powder
1 c All purpose flour
1 c Granulated sugar
2 Large eggs
1/2 tsp Vanilla essence
2 tbsp Cocoa powder
1/2 tsp Baking powder
1/4 tsp Salt
1/2 c Chopped Walnuts



































Method:

1.Double boil the chocolate chips,butter and instant coffee till the chocolate and butter melts well.Allow it to cool.
2.Sift the flour,cocoa powder,baking powder and salt.
3.In a bowl pour the chocolate and butter mixture.
4.Add eggs one by one and beat after each addition with a balloon whisk.
5.Add the sugar and mix well.
6.Add the vanilla essence and mix well.
7.Now add the flour mixture and mix well.
8.Now mix the walnuts into this batter.



















9.Preheat the oven at 200 degree C for 15 mins.
10.Grease a square baking tin and line it with parchment paper.
11.Pour the batter to the tin.
12.Bake at 180 degree C for 30 to 35 mins.
13.When tested with a tooth pick there should be some crumbs of the brownies on it.
14.Cool it and serve with vanilla ice cream or as it is.
15.Enjoy the brownies!!!!!!!

Adukku Pathiri

Hi friends blogging after many days.Was busy with many things.

This is a famous malabar dish.This is a layered dish.Pancakes flled and layered with chicken masala filling.

Now to the recipe......


















Ingredients:

For Pancakes:

1c Maida
1 Egg
Salt
Water

For Filling :

4c Chicken cooked and shredded
1 Onion
1 Tomato
½ tsp Ginger garlic paste
¼tsp Turmeric powder
½tsp Red chilly powder
½ tsp Garam masala powder
1tbsp Oil

For Dipping Pancakes:

3 Eggs
Salt




















Method:

1.In a bowl mix the ingredients for the pancakes to a loose batter.
2.Heat a tawa and pour one big spoon of batter and swirl the tawa and cook the pancakes one by one and keep aside.
3.In a pan heat little oil.
4.Add chopped onions and sauté well.
5.Add ginger garlic paste and sauté well.
6.Add the turmeric powder and red chilly powder and sauté well.
7.Now add the chopped tomatoes and sauté well.
8.Now add the cooked chicken shredded and mix well with the masala.
9.Add garam masala powder and mix well.
10.Keep this aside.



















11.Now beat the eggs and salt in a plate.
12.Now grease a non stick deep vessel.
13.Now dip one pancake and place in the vessel.
14.Spread some chicken filling on top of the pancake.
15.Again dip the pancake in the egg mixture place on top of the chicken fiiling.
16.Repeat this till the filling and pancakes finish.
17.Top layer should be pancake.
18.Now the rest of egg mixture on top.
19.Close the vessel and cook on very low flame fo 15 to 20 minutes or till the poured eggs  cooked well.
20.Invert this to a plate .
21.Cut into pieces and serve.

Joan's Rainbow Cake

I 'll say this is a celebrity cake.This is the cake from the popular movie Salt And Pepper.When ever my kids and hubby see this cake in the film they keep on asking why don't u make this.I too wanted to make this cake from the time I watched that movie.

Made this cake for eid and the result was tooo good.My family and relatives liked it soooooo much.When the taste of orange,pistha and strawberry came in one piece of cake that was so yummy.My kids too enjoyed it very much.In the movie they r saying u can add dates and raisin in pistha cake but i didn't add anything like that only pistha in pistha cake .I made this cake in 2 days.The first day I made all the 3 cakes and kept in the fridge.The next day gave icing for the cake.

Now to the recipe how I made this cake....





























































Ingredients:

For Strawberry Cake:

1c All purpose flour
1tbsp Corn flour
3/4 to 1c Sugar
1tsp baking powder
1 Large egg
2tbsp Butter
3tbsp oil
1c Strawberry puree(I used puree of frozen strawberries)
1/2tsp Strawberry essence
Few drops of red color

For Pistha Cake:

1c All purpose flour
1tbsp Corn flour
1tsp Baking powder
3/4 to 1c Sugar
1 Large egg
1c Pistha
1/2c Milk
2tbsp Butter
3tbsp oil
Few drops of green color

For Orange Cake:

1c All purpose flour
1tbsp Cornflour
3/4 to 1c Sugar
1 Large egg
1tsp Baking powder
3/4c Fresh Orange juice
1/2 to 1 tsp Orange zest
2tbsp Butter
3tbsp Oil
Few drops of orange color



















Method:

Strawberry Cake:

1.Defrost the strawberries and cook it with little water and sugar till soft.
2.Keep it aside to get cooled and puree this in a blender.
3.In a bowl sieve the flours and baking powder.
4.In another bowl beat the butter,oil and sugar well.
5.Add the egg and beat well.
6.Now add the flour and fold in well.
7.Now add the strawberry puree and mix well.
8.Add the red color.
9.Preheat the oven at 200 degree C for 15 mins.
10.Pour this batter in a  greased cake tin and bake the cake at 175 degree C for 30 to 35 mins or till the tester comes out clean.
11.Allow the cake to cool completely.

Pistha Cake:

1.Soak the pistha in milk for 1/2 to 1 hr.

2.Paste the pistha into very fine paste.
3.Sieve the flours and baking powder.
4.In a bowl beat the butter,oil and sugar well.
5.Add the egg and beat well.
6.Now add the flour and fold in well.
7.Now add the pistha paste and mix well.
8.Add the green color and mix.
9.Preheat the oven at 200 degree C for 15 mins.
10.Pour the batter in a greased cake tin and bake the cake at 175 degree C for 30 to 35 mins or till the tester comes out clean.
11.Allow the cake to cool completely.

Orange Cake:

1.Squeeze the orange and take fresh orange juice.

2.Sieve the flours and baking powder.
3.In a bowl beat the butter,oil and sugar well.
4.Add the egg and beat well.
5.Now add the flour and fold in well.
6.Add the orange juice and orange zest  to this and mix well.
7.Add the orange color and mix well.
8.Preheat the oven at 200 degree C for 15 mins.
9.Pour this batter to the greased cake tin and bake at 175 degree C for 30 to 35 mins or till the tester comes out clean.
10.Allow the cake to cool completely.

I wrapped the cakes in a cling film after the cakes get cooled and kept in the fridge.



































For Icing:

Ingredients:

4 Sachets Dream whip powder.
3/4 to 1 C Cold milk
1tsp Vanilla essence

150 grm Fresh cream
150 grm Cooking chocolate

Method:

1.In a bowl beat the dreamwhip powder,milk and vanilla essence till fluffy.
2.Once the cakes get cooled spread the whipping cream and layer the cakes.
3.First the strawberry cake,then pistha cake and lastly orange cake.
4.Spread the whipping cream all over the cake and put it back in the fridge for some time.
5.Now double boil the fresh cream and chocolate till fully melted.
6.Allow it to cool.
7.Now pour this over the cake .
8.Again keep in the fridge for couple of hours.
9.Slice and enjoy the taste of strawberry,pistha nd orange in one slice of cake!!!!!!!

Carrot Coconut Milk Halwa 150th Post!!!!!!!!

Eid Mubarak To All My Dear Friends.Ramadan was really busy and had a great eid too.....
Posting my 150th recipe post.A sweet dish to celebrate this post.This is a carrot halwa with coconut flavor.





















































Ingredients:

5 Large Carrots
2c Coconut milk
1/2c Fresh milk
1/2 to 3/4c Jaggery Syrup or as per ur taste
3tbsp Ghee
2tbsp Rice powder dissolved in 1/4c water
Nuts for garnishing



















Method:

1.Peel and cut the carrots.
2.Boil the carrots in water.
3.Grind the cooked carrots and milks in grinder.
4.Heat ghee in a non stick kadai.
5.Pour the carrot and milk mixture and jaggery syrup to the kadai and stir well.
6.Add the rice powder dissolved in water to the carrot mixture.
7.Stir till the mixture becomes thick.



































8.Pour this to a dish and keep in fridge to set.
9.Garnish with chopped nuts.
10.When cool and set enjoy the halwa.

Banana Jelly Pudding

Hi Friends!!How U all doing?Was busy with kids vacation and ramdan.No time for blogging.
This pudding is and easy one with full banana flavor....











Ingredients:

1packet Biscuit (marie or digestive)
1packet Banana jelly
2 Sachets Dreamwhip powder
1 tin Nestle cream (banana flavor)
1/2 C Cold Milk
2 Bananas
1/4 C Melted butter
10 grms Gelatine
1/4 to 1/2 tin Condensed milk
Nuts to garnish


































Method:

1.Powder the biscuit and mix with  melted butter and set this as a base in a pudding dish .
2.Keep this in the fridge for a while.
3.Make the jelly as per the instructions and set the jelly fully.
4.Now in a bowl add the dreamwhip powder and cold milk and beat till fluffy.
5.Add the banana flavored cream and beat well.
6.Soak the gelatine in 4 tbsp water for 10 mins.
7.Add the condensed milk to the cream mixture.
8.Double boil the gelatine and add this to the cream mixture.












9.Now crush the set jelly with a fork.
10.Add the crushed jelly to the cream mixture well.
11.Now cut the bananas into round and keep the slice over the biscuit base.
12.Pour the cream jelly mixture over the bananas and set this in the fridge for couple of hours.
13.After the pudding is set garnish with nuts.
14 Slice and enjoy......

Borbon Pudding

This is a tasty layered pudding more with chocolate flavor.This is best for chocolate lovers.This is made with a layer of chocolate cake topped with whipped cream and another layer of borbon biscuits topped with chocolate whipped cream.Or can do 2 layers of biscuits only.This will be a sure hit dessert.
Now to the recipe....





















































Ingredients:

First Layer:

1 small Chocolate cake or brownie Or 1 packet borbon biscuit
Warm Coffee or Nesquik
2 sachets Dreamwhip Powder
1 tin Puck cream plain
1/2c Cold fresh milk or Cold evaporated milk
Vanilla essence

Top Layer:

1 small Chocolate cake or brownie Or 1 packet borbon biscuit
Warm Coffee or Nesquik
3 sachets Dreamwhip Powder
1 tin Puck cream plain
1/2 to 3/4c Cold fresh milk or Cold evaporated milk
2tbsp Cocoa powder or Melted chocolate
Vanilla essence
Nuts and Grated chocolates for garnishing



















Method:

For First Layer:

1.Slice the cake and layer it in a pudding dish.
2.Soak the cake with warm coffee or nesquik.
3.Sprinkle some nut over this.
4.Keep this in the fridge while whpping the cream.
5.Now in a bowl put 2 sachets of dreamwhip powder and 1/2 c Cold milk and beat well till fluffy.
6.Add the vanilla essence and 1 tin puck cream to this and beat well.
7.Spread this cream over the cake.
8.Keep this in the fridge again.



















For Top Layer:

1.Open the biscuits into two piece.
2.Dip each biscuits in coffee or nesquik and layer on top of the first layer.
3.Sprinkle some nuts on top of this also.
4.Keep this again in fridge.
5.Now put 3 sachets of dreamwhip and 1/2 c Cold milk and beat well till very fluffy.
6.If too thick add little more milk.
7.If using cocoa powder sieve the cocoa powder and beat along with the dream whip.
8.Now add the puck cream and beat well.
9.Add vanilla essence.
10.If using melted chocolate add at this time and mix well.
11.Pour this over the biscuit and spread evenly.
12.Sprinkle nut and grated chocolate refrigerate till set and enjoy the treat!!!!!!!!!!

Mango Pudding

This is an easy and tasty pudding.......this tastes really good with fresh mangoes.Now as its season of mangoes thought will make this pudding.One of our friend was asking for this pudding for many months.He has tasted this once from here.I said him when we get fresh mangoes I'll make it for u.
Last week I bought different types of mangoes.Now to the recipe:







Ingredients:

3 Medium sized Riped Mangoes
3/4 to 1 tin Condensed milk
1 tin Nestle cream
2 Sachet Dreamwhip powder
1/2C Cold milk
10 grms Gelatine powder
4tbsp Water
2drops Mango essence
2drops Yellow food color
Powdered biscuits and nuts for garnishing




































Method:

1.Peel the mangoes and grind it in the mixer with nestle cream and condensed milk.(I used 3/4 tin only u can use as per your sweetness)
2.Soak the gelatine in water for sometime.
3.In a bowl beat dreamwhip with cold milk with essence and color.
4.Beat till its creamy and fluffy.



































5.Now mix the mango mixture to the dreamwhip mixture.
6.Double boil the gelatine mixture.
7.Now pour the gelatine to mango mixture and mix well.
8.Pour this in a pudding dish and set in fridge for 4 to 5 hrs or overnight.
9.When set garnish with powdered biscuits and nuts.
10.Serve and enjoy the taste of mangoes.

My Blog Turns 2!!!!!!!!!!!!! Celebrating With Boondhi Laddoo

Hi friends!!!!!My blog turning 2 today.........so happy to reach here.A big thanx to U all those who encouraged me and wished me the best to do all these.Made many good friends here.Learned many new dishes .......... once again thanx to my family and all my friends.................Hope U'll continue this love and encouragement .......
To celebrate an occasion we always choose sweets.......so here also I like to celebrate this moment with a sweet.The famous sweet boondhi laddoo......




































Ingredients:

2C Besan Flour
1 1/2C Water
2 Drops of yellow color
Oil for frying
1tbsp Fried cashews and raisins

For Sugar syrup:

1 1/2 C Sugar
1 to 1 1/4 C of water
A pinch of Saffron (optional)
1/2tsp Cardamom powder











Method:

1.Sieve the besan flour and keep aside.
2.Mix the water slowly to this flour and mix the batter without lumps.
3.It should not be so thick or so thin.
4.Add a drop of yellow color in the batter.
5.Now in a pan heat sugar,water ,saffron,cardamom powder and a 2 drops of yellow color in this too.
6.Boil the syrup till one thread consistency.
7.Off the flame anf keep aside.
8.Heat oil in a kadai.
9.Now pour the batter through laddle with holes directly to the hot oil.



































10.Fry the balls till done but the boodhis should not be so crispy.
11.Now strain the boodhis from oil and put into the sugar syrup.
12.Fry all the boodhis and pu to the sugar syrup.
13.Add the fried cashews and raisins to this.
14.Now mix the boodhis well in the sugar syrup.
15.Make balls out of this while its warm or it will be little difficult to make the laddoos.
16.Laddoos ready to enjoy!!!!

Chocolate Sponge With Coffee Cream And Walnut Topping

The combination of chocolate and coffee is awesome..............chocolate sponge with coffee cream was really tasty.This cake was so soft.Made in two 6" pans.So got a 4 layered cake.....I couldn't take the inner portion of the cake because after cutting the cake  I couldn't get even a piece to take a pic.........
This cake is to celebrate Mother's Day.........Happy Mother's Day To All Lovely Mother's.........


















Ingredients:

3/4c All purpose Flour
2tbsp Corn Flour
1/2c Cocoa powder
6 Eggs
1c Sugar
1tsp Vanilla essence
1/2tsp Baking powder
1/4tsp Baking soda
2tbsp Oil

For Filling:

4Sachets Dream Whip Powder
1c Cold milk
1tsp Coffee Powder
1tsp Cocoa Powder
Toasted walnuts for topping
Chocolate rice for decorating


















Method:

For Cake:

1.Sieve the all purpose flour,corn flour ,baking powder and baking soda and keep aside.
2.In a bowl beat the eggs and sugar till creamy and increases its volume.
3.Now add the vanilla essence and mix well.
4.Now add the flour mix little by little and fold in well.
5.Add the oil and mix .
6.Preheat the oven at 200 degree C for 15 mins.
7.Grease two 6" round pans.
8.Pour the batter equally in 2 pans.
9.Bake this at 175 degree C for 15 mins or till the tester comes out clean.
10.Allow the cakes to cool totally.

For The Filling:

1.In a bowl put the dreamwhip powder.
2.Mix the coffee power with the cold milk.
3.Now pour this to the dreamwhip powder and beat well till very fluffy and holds well.
4.Add a little vanilla essence to this and mix well.
5.For the star decorations add 1tsp cocoa powder to this cream and mix well and use for the decoration.

Assembling the cake:

1.Cut the cakes into 2 portion.
2.Spread the coffee cream on each layer and top with the other layer.
3.Now spread the cream all over the cake and cover fully.
4.put the chocolate rice on the sides.
5.Decorate the cake with coffee and cocoa cream stars.
6.Top the cake with toasted walnuts coarsely powdered.
7.Refrigerate the cake for 2 hrs till set.
8.Slice and enjoy.

U can even put some walnuts in each layer also.

Pizza Pie

Hi friends!back after many days.Was busy with many things like kids small vaccation,open house,covering books then reopening so so busy.Now back to normal days again.
Today I'm posting a pizza based dish but different also.Its tasty and made very easy.


















Ingredients:

For Dough:

21/2C All purpose flour
1C Milk
2tsp Instant yeast
3tsp Sugar
1tbsp Olive oil
1tsp Salt

For Filling:

1C Chicken breast cooked and shredded
1 Capsicum
1 Onion
1/2C Sweet corn
1 Tomato
2Cloves Garlic
Black olives
Shredded Mozarella cheese
1tsp Oregano
1/2tsp Parsley
1/2tsp Thyme
1tsp Pepper powder
1tsp Ketchup
1tsp Pizza sauce
1tsp Olive Oil
Sesame seeds (optional)
1 Egg










Method:

Step 1:


1.Warm the milk and sprinkle yeast and sugar on it and keep aside for 10 mins.
2.In bowl take flour ,salt and add milk and yeast mixture and knead slowly.
3.Add some olive oil and knead well till the dough becomes soft and elastic.
4.Keep it aside for 2 hrs covered with wet cloth.

Step 2:

1.For pizza sauce heat olive oil in a pan.
2.Add chopped garlic and saute till raw smell goes.
3.Now add chopped tomatoes and saute well till tomatoes are soft.
4.Now add tomato paste and tomato ketchup and mix well.
5.Add suagr,salt and water and mix well and boil.
6.Add oregano.parsley and basil leaves and mix well.
7.Boil this till it reaches a consistency of a sauce.
8.Off the flame and allow it to cool. 

Step 3:

1.For filling heat olive oil and saute chopped garlic and add the shredded chicken.
2.Now add the pepper powder,oregano,parsley  and thyme and mix well.
3.Now add the cubed capsicum,corn and tomato deseeded and cubed.
4.Mix this well and keep aside.










Step 4:

1.Now divide the dough into 2 equal portions.
2.Grease the pizza pan with olive oil and roll one portion of dough into a big disc and place in the pizza pan.
3.Prick all over with a fork.
4.Now apply pizza sauce on this.
5.Now put the chicken filling ,cubed onion,black olives,ketchup and mozarella cheese.
6.Now roll the other portion of the dough and place over the filling and seal the sides very tightly.
7.Prick all over with a fork again.
8.Now give and egg wash on this.
9.Put mozarella cheese and sprinkle sesame seeds on this.
10 Preheat the oven at 200 degree C for 15 mins.
11.Bake the pizza pie at 180 degree C for 18 to 20 mins till the top becomes brown.
12.Cut and serve.
