Baigan Aloo

Hi friends, I'm back after few weeks....was so busy with shifting and settling.Now almost got set and feeling good.Really missed u all a lot......Hope u all had a great new year.
Now about the dish ,this is a simple dish........this will go well with chapathis and plain rice........



















Ingredients:

2 Big Potatoes
2 Big Egg plants
1 Big Onion
1 Big Tomato
3 Cloves Garlic
1/2 tsp Turmeric powder
1 tsp Kashmiri chilly powder
1 tsp Cummin seeds
Salt
Oil
Coriander leaves



















Method:

1.Cut the potatoes and eggplants into cubes.
2.Shallow fry these vegetables and keep seperately.
3.In the left oil add cummin seeds and let it splutter.
4.Add the chopped garlics,onions and saute.
5.Add the turmeric powder,chilly powder and salt and saute well.
6.Add the chopped tomato and mix well till the tomato is soft.
7. Add the potato and mix well and close the lid and cook on low flame.
8.When the potato is almost done and the eggplants and mix well.
9.Close and cook till everything is cooked.
10.Garnish with Coriander leaves.
11.Serve hot with chappathis or plain rice.
