Kothu Chappathi

Today I'm posting an easy and anytime meal.This is a full meal.This can be made by left over chappathis...This is very tasty and comforting dish..






























































Ingredients:

6 to 8 Chappathis
1big Onion
3cloves Garlic
3 Green chillies
1/2tsp Red chilly powder
1/4tsp Turmeric powder
1/2tsp Coriander powder
1/4tsp Fennel seeds powder
1/4tsp Garam masala powder
4 to 5 Cashewnuts
Chicken pcs (optional)
Salt
Coriander leaves
Oil

























Method:

1.Cut the chappathis into small pcs and set aside.
2.Heat oil in a kadai and put the broken cashewnuts.
3.Add the chopped garlics and saute.
4.Add the sliced onions and saute till transparent.
5.Now add the spice powders.

























6.Once the raw smell of the powders goes away add the sliced veggies and chicken pcs(if using) and mix well.
7.Once the veggies are almost cooked add the pcs of chappathis and mix well .
8.Add the coriander leaves.
9.Serve hot.

Puttu Upma And Some Awards!!!!!!!!

This is an easy dish for breakfast or evening snack.This is done with rice flour steamed cakes (puttu).If u have left over puttu u can make this in 5 to 10 mins.This is tasty too......



















Ingredients:

4 or 5 Pieces of puttu
1 Big onion
3 Green chillies
1 Small piece ginger
1/4 tsp Turmeric powder
1/2 tsp Chilly powder

For Tempering:

Oil
Curry Leaves
1/2 tsp Urud dal
1/2 tsp Mustard seeds
2 Whole red chillies



















Method:

1.Crush the puttu with hand and keep aside.
2.In a pan heat oil.
3.Splutter mustard seeds and urud dal.
4.Put Whole red chilly and curry leaves.
5.Add the chopped onions and saute.
6.Add the chopped green chillies and ginger and saute.
7.Add the turmeric powder and chilly powder.
8.Add salt as per taste.
9.Now add the crushed puttu and mix well in this .Once mixed well off flame.
10.Serve hot.

Idli

Idli for breakfast is really healthy and it is very tasty with any curries...........i'm not very much fond of idlis but my kids and hubby love idlis......... my kids like to have idlis with sugar......


















Ingredients:

2c Raw white rice
1c Urad dal(uzhunnu parippu)
3/4 c Cooked rice
3/4 tsp fenugreek seeds
Water as required
Salt




















Method:

1.Soak raw rice,urad dal and fenugreek seeds for 4 to 6 hrs or over night.
2.Soak both seperately or together.
3.Grind this together or seperately along with water and mix together.The batter should be little thick.(Fenugreek makes the idli more softer and tastier.)
4.Leave it in a warm place for fermentation for 6 to 8 hrs.
5.After it is fermented add salt as per taste.
6.Now boil water in a idli steamer and pour one ladle of batter in each idli mould and steam it till cooked.
7.Have idlis with coconut chutney or any curries.

Vellappam

Famous breakfast item for keralites……tasty and easy appam…..This goes very well with vegetable stew,egg roast,chicken curries and even fish moli…….here we all like vellappam, we love to have appam with fresh coconut milk and sugar…….


















Ingredients:
2c Raw white rice(Pachari)
1c Grated coconut
¾ c Cooked rice
Coconut water of one coconut
1tsp Yeast
2tsp Sugar
Water
Salt


















Method:
1.Soak raw rice for 4 hrs or overnight.
2.Grind soaked rice,grated coconut, cooked rice and sufficient water in a grinder.
3.Warm the coconut water and add sugar and yeast and keep aside.
4.When the batter should be pourable consistency.
5.Now add the yeast mixture to the batter and mix well and close with a lid and keep for fermemtation.
6.It will take 6 to 8 hrs to ferment and will less or more time due to weather.
7.Now after fermentation add salt and mix with a spoon.
8. Heat a appa chatti and pour a spoonful of batter and rotate the chatti.



















9.Close the lid of the chatti and cook the appams.
10.When it is fully cooked take it out from the chatti and serve in a plate.
11.Serve along with any curry.

Noodles Upma

This is a breakfast item which can be made very easily……….actually noodles is a Chinese item but with that I made a simple kerala dish upma…….we can used any vegetable in this but I loved this version……using sweet corn.
















Ingredients:

1pkt Noodles
1 Medium onion
1 Small piece ginger
1 Green chilly
½ cup Frozen Sweet corn
2 Whole red chillies
Curry leaves
Mustard seeds
Oil
Salt

Method:

1.Crush the noodle with the hand before opening the packet.
2.Now boil water put the noodles and sweet corn and cook.
3.When the noodles are done drain out the water and pour some cold water over it.
4.In a pan add oil put mustard seeds when it splutters add whole red chilly and curry leaves.
5.Add onioun and sauté.
6.Add chopped ginger and green chilly.
7.Now add the seasoning powder and chilly cabe available inside the packet of noodles,add salt as per taste.
8.Mix well and add the cooked noodles.Mix very well and just cover the lid for 2 mins.
9.Serve hot.This is a tasty breakfast item.

Plaintain Roast

This is not a new recipe,everybody knows this one.This is very nutritious dish for kids and even for adults.
My kids like this for breakfast or for evening tea.We can make this very fast if any unexpected guests comes.



















Ingredients:

2 Big Plaitains
2tsp Sugar
1 Egg
1tbsp grated coconut
5 to 6 Chopped Cashewnuts
2tbsp Ghee


Method:


1.Cut the plaitains into small pieces.
2.Heat ghee in a pan add chopped cashewnuts.After the cashewnuts are fried add the plaintains and when brown color appears here and ther add sugar sauté well.
3.Now break the egg into it and scramble it.
4.When the egg is cooked well add grated coconut and mix it well and off the flame.
5.Serve hot.

Pathiri

This is a Malabar dish.This aways made there. In our place these were made if some guests come or for any special occasions but now a days these are made often in our place too.I love this very much.This is great with chicken or mutton curry or even with coconut milk and sugar…………
This is little time consuming but tasty one.This is made for breakfast and for dinner also.





















Ingredients:1c Rice flour
1c Water
Salt


Method:

1.Boil the water with salt.
2.Add the flour to the boiling water sd mix well with a wooden spoon.
3.Off the flame and put this mixture to a big flat tray.
4.Now knead this to a dough while it is hot .
5.Now make balls out from this dough.
6.Press this in a presser or roll with arolling pin.
7.Heat a tawa and place each pathiri on the tawa and cook till it puffs up.
8.Serve this with chicken curry,mutton curry or with fish curry also.
