Gulab Jamun CheeseCake 200th Post !!!!

This is my 200th post...so happy to write this post, actually when I started my blog I never thought I will be able to reach atleast 100 posts....but day after day this blog and blogging became a part of my life and improved my cooking a lot....Got many friends through blogging....Thanks a lot to my family and friends who supported me a lot to keep on blogging....

Today I'm posting Gulab Jamun cheesecake which I was waiting to try for a long time....

























Ingredients:

For Gulab Jamun:

2C Milk Powder
1/2 C All purpose flour
1/2 tsp Baking soda
3tbsp Ghee
A pinch salt
Milk for kneading
Oil
1C Sugar 
1C Water
2tsp Rose water
1/2tsp Cardamom powder

For CheeseCake:

200g Cream cheese
1 sachet Dreamwhip powder
1/2C Cold milk
1tin Puck Cream
3/4 tin Condensed milk
3tsp Gelatine
4tbsp Water
1pckt Digestive biscuit
50g Melted Butter
Crushed pisthachios for garnishing





































Method:

Gulab Jamun:

1.In a bowl add the milk powder,all purpose flour,baking soda,salt and ghee.
2.Add milk little by little and knead the well.
3.Cover and let it sit for 15 to 20 mins.
4.Meanwhile prepare the sugar syrup.Boil the sugar and water till thickens.
5.Add the rose water and cardamom powder to this.
6.Now heat oil in a kadai to fry the jamuns.
7.Heat of the oil should be very low as the jamuns get cooked well inside.
8.Now make balls out of the dough.
9.Slowly put few balls in the hot oil and fry till these are cooked and golden brown.
10.Drain the excess oil and drop this balls into warm sugar syrup. 
11.Let it absorb the syrup.


























For CheeseCake:

1.Grind the digestive biscuits and melted butter.
2.In a spring form pan press this biscuit mixture as a base for cheesecake.Keep it in fridge.
3.Soak the gelatine in water for sometime.
4.In a bowl beat the dreamwhip powder with cold milk ans vanilla essence till stiff peaks.
5.Add the cream cheese and cream and beat well.
6.Add the con.milk and mix well.
7.Now double boil and melt the gelatine and add to the creamcheese mixture and mix well.

























Assembling The CheeseCake:

1.Slightly squeeze the jamuns and cut into two pieces.
2.Arrange this cut jamuns on top of the biscuit base.I just drizzled some sugar syrup on top of the biscuit base.
3.Pour the cheesecake mixture over this.
4.Keep this in fridge for 4 to 5 or till set.
5.Garnish with crushed pistachios.
6.Cut and serve...Enjoy the taste of cheesecake and gulab jamuns...

Besan Laddoo

Hi Friends...Happy New Year To All..wishing u all a happy year ahead,,,This is my first post of this year..hope i can post more recipes than last year,,Thanks a lot to all for the support for all these years...
I'm posting a laddoo today as i thought will start with a sweet recipe...

Now to the recipe..


























Ingredients:

1C Besan (Gram flour)
1C Powdered Sugar
1/2 tsp Cardamom powder
3tbsp Ghee
2tbsp Chopped or Coarsely grinded pistachios


























Method:

1.Heat a kadai dry roast or roast the besn with a1tsp of ghee.
2.Roast it till the raw smell goes and a light brown color appears.
3.When it reaches this stage add the powdered sugar and mix well.
4.This may slightly get melted.
5,Now off the flame and add cardamom powder and mix well.


6.Now when it is still warm and if can be handled make into balls.
7.Now just dip slightly in the ghee and dip in the crushed pistachios.
8.Let it cool completely.
9,Enjoy the laddoosss...

Uzbul Zainab Or Sweet Cheese Rolls Guest Post For Yummy Food


Hi friends, this post I should have posted on 2nd July.This is the 3rd year I'm doing the guest post fo r her yearly Ramadan Event Joy From Fasting To Feasting VIII. 


Thank You Lubna of Yummy Food for giving me the chance to do the guest post this year too. 

This year I'm posting an arabic sweet Uzbul Zainab means zainab's finger.





Ingredients:

1 Pkt Samosa sheet
10 pc Triangular Cheese
Oil for frying
Maida and water mix for sticking the edge

For Sugar Syrup:

1C Sugar
3/4c Water
1/2tsp Rose water 
1/4tsp Cardamom powder
1/2tsp Lime juice



Method:

1.Defrost the samosa sheets.
2.Cut the triangle cheese into pieces.
3.Now in a in a pan boil the sugar and water till it becomes thick syrup.
4.Now add cardamom powder,rose water and lime juice.
5.Now take out each samosa sheet keep a pc of cheese on one small end of the sheet.
6.Cover it with the small ends and roll it to a small log.
7.Stick the end with maida paste.
8.Do the same with rest of the sheets.


























9.Heat oil in a pan.
10.Fry this rolls in the oil till golden brown.(The cheese should be covered well otherwise it will melt in hot oil and if it oozes out it will splutter in the oil.So be careful of that).Drain out the excess oil.
11.Now dip each roll in the syrup and coat well and place on a plate.
12.Enjoy the rolls...

Mothichoor Laddoo To Celebrate My 4th Blog Anniversary!!!

It was yesterday June 7th my blog's 4th b'day.Happy to celebrate this.When I started the blog I was not sure whether I could go on with this for an year but now this blogging is a part of my life.I'm so happy and satisfied too.I couldn't post yesterday because I was soooo busy..And a big thanx to all my family,relatives and friends for this great support and hope this continues.....


























































Ingredients:

For Boondis:

1c Besan flour/Gram Flour
3/4 to 1c Milk
1tbsp Ghee
A pinch of orange colour
Oil for frying

For Syrup:

3/4c Sugar
1/2c Water
1/2tsp Cardamom powder
1tsp Rose water
A pinch of orange colour

Nuts(Almond,Cashew nuts or Pistachio)


Method:

For Boondis:

1.Sift the flour to a bowl.
2.Add the ghee and add the milk and mix the batter well.
3.Add the colour.The batter should not be too runny or too thick.
4.Set aside for 10 mins.
5.Now heat oil in a kadai.
6.Now pour the batter through a perforated spoon to the hot oil.
7.Fry the boondis not so crisp.
8.Drain out the excess oil.
9.Keep aside.

For Sugar Syrup:

1.Boil the water and the sugar together till we get a one string consistency.
2.Off the flame add the cardamom powder,rose water and colour to this.
3.Let it cool for few minutes.
4.Put the boondis to the warm syrup and mix well.
5.Add the nuts to this.



































6.Now in a mixer grinder add the mixed boondis along with a 1tbsp of boiling water.
7.Pulse this for 3 times.
8.Now put this to a bowl and make out laddoos from this.
9.This laddoo has a soft texture so be careful while making balls.
10.Enjoy the delicious laddoos!!!

Carrot Coconut Milk Halwa 150th Post!!!!!!!!

Eid Mubarak To All My Dear Friends.Ramadan was really busy and had a great eid too.....
Posting my 150th recipe post.A sweet dish to celebrate this post.This is a carrot halwa with coconut flavor.





















































Ingredients:

5 Large Carrots
2c Coconut milk
1/2c Fresh milk
1/2 to 3/4c Jaggery Syrup or as per ur taste
3tbsp Ghee
2tbsp Rice powder dissolved in 1/4c water
Nuts for garnishing



















Method:

1.Peel and cut the carrots.
2.Boil the carrots in water.
3.Grind the cooked carrots and milks in grinder.
4.Heat ghee in a non stick kadai.
5.Pour the carrot and milk mixture and jaggery syrup to the kadai and stir well.
6.Add the rice powder dissolved in water to the carrot mixture.
7.Stir till the mixture becomes thick.



































8.Pour this to a dish and keep in fridge to set.
9.Garnish with chopped nuts.
10.When cool and set enjoy the halwa.

My Blog Turns 2!!!!!!!!!!!!! Celebrating With Boondhi Laddoo

Hi friends!!!!!My blog turning 2 today.........so happy to reach here.A big thanx to U all those who encouraged me and wished me the best to do all these.Made many good friends here.Learned many new dishes .......... once again thanx to my family and all my friends.................Hope U'll continue this love and encouragement .......
To celebrate an occasion we always choose sweets.......so here also I like to celebrate this moment with a sweet.The famous sweet boondhi laddoo......




































Ingredients:

2C Besan Flour
1 1/2C Water
2 Drops of yellow color
Oil for frying
1tbsp Fried cashews and raisins

For Sugar syrup:

1 1/2 C Sugar
1 to 1 1/4 C of water
A pinch of Saffron (optional)
1/2tsp Cardamom powder











Method:

1.Sieve the besan flour and keep aside.
2.Mix the water slowly to this flour and mix the batter without lumps.
3.It should not be so thick or so thin.
4.Add a drop of yellow color in the batter.
5.Now in a pan heat sugar,water ,saffron,cardamom powder and a 2 drops of yellow color in this too.
6.Boil the syrup till one thread consistency.
7.Off the flame anf keep aside.
8.Heat oil in a kadai.
9.Now pour the batter through laddle with holes directly to the hot oil.



































10.Fry the balls till done but the boodhis should not be so crispy.
11.Now strain the boodhis from oil and put into the sugar syrup.
12.Fry all the boodhis and pu to the sugar syrup.
13.Add the fried cashews and raisins to this.
14.Now mix the boodhis well in the sugar syrup.
15.Make balls out of this while its warm or it will be little difficult to make the laddoos.
16.Laddoos ready to enjoy!!!!

Andi Unda Or Cashewnut Balls

This is an easy kerala dish.My aunty makes this so deliciously.Whenever we visits her home she used ask what u want specially we used to say andi unda......This is not exact recipe of hers....heres something more I have added in this.But this is also so tasty, here everybody liked this so much......


Ingredients:

1C Cashewnuts
1/2C Parboiled rice
1C White sesame seeds
1/2 to 3/4C Jaggery grated
1C Grated coconut
1/2tsp Cardamom powder


Method:

1.Roast the rice till crispy.
2.Roast the sesame seeds and cashewnuts till light brown.
3.Powder this roasted rice,sesame seeds and cashewnuts.
4.Now put everything in a bowl.
5.Now add the grated jaggery,coconut and cardamom powder to this and mix well.
6.Now make small balls out of this mixture.
7.Enjoy the tasty balls........

Banana Cooler


Hi friends..........have not blogged for few weeks.....actually I'm into my small new business of catering at home itself which kept me busy and away from blogging these days.Hope all r doing good.I was thinking to post this recipe for iftar again didn't get time.This is a very easy and healthy dish to cool ur body.So I gave it the name banana cooler.
This can be made in coconut milk also but i like this more with fresh milk.



















Ingredients:

6 Small bananas (Cherupazham any type)
Sugar as per taste
1tsp Cumin powder
4 to 5 shallots finely chopped
1c Cold Fresh milk or Coconut Milk


















Method:

1.In a bowl peel the bananas and mash it with hand.

2.Add sugar as desired.
3.Add the shallots and cumin powder.
4.Mix well and add the milk as how u need the consistency.
5.Serve in bowls.

Banana Halwa

This is an easy halwa made with kerala banana(Nenthra pazham).This is so tasty and healthy also.If we add ghee also those ghee will come out from the halwa at the last stage of cooking.Kids will love this.If we make this in 'uruli' this will get a dark brown color as I cooked in non stick vessel this has got a golden color but the taste was too good.



















Ingredients:

6big Nethrapazham
1c Sugar
1/2c Water
1/2tsp Cardamom powder
3/4 to 1 c Ghee
1/2c Chopped (cashewnuts plain or roasted in ghee)
2tbsp Maida mixed with water thinly


















Method:

1.In a non stick large vessel put the sugar and water and boil.
2.Boil till it slightly thickens.
3.Add the chopped bananas and keep on stiring.
4.Stir till all the bananas are totally cooked and fully mashed.
5.While stirring add ghee and maida mixture in small amounts.
6.Keep on stirring till the mixture thickens and seperates from the vessel.
7.At this stage add the cardamom powder and cashewnuts.
8.Mix well and stir for 2 or 3 mins more till the ghee oozes out.
9.Off the flame.
10.Now transfer this halwa to plate and smooth the top of halwa.
11.Let it cool for couple of hours.
12.After cooling cut into desired shape and serve.

Rice And Honey Pudding

Now this sweet dish is dedicated to all my teachers who ever taught me and supported me in my life………….”Happy Teachers Day”……..without them we are nothing………. Thank you teachers..........
This pudding almost resembles a kheer……..instead of sugar honey is used………This is not so sweet pudding if u want more sweet u can add more honey or sugar………




















Ingredients:

6c Milk
¾ Rice
¼ c Honey or more
1tbsp Chopped Almonds
1tbsp Chopped pisthachios


















Method:

1.In a large pan pour the milk and honey and bring to boil till the honey dissolves.
2.dd the rice and cook in sim for 45mins.
3.When the rice is cooked and the mixture gets thickened pour this to a bowl.
4.Garnish with chopped almond and pisthachios and drizzle some honey also.
5.Serve warm or cooled.

Hi everybody missed u all for some days……was fully busy with many things……..So again some awards from my dear blogger friends akila of akilaskitchen and satya of superyummyrecipes ………they both have beautiful blogs.As per the rule I have to pass this to my 15 blogger friends and as satya said I can’t mention some so all my blogger friends please feel free to come and collect this award from here and pass to your friends………thanx a lot akila and satya………..




This is an easy recipe this is called kunji pidi,kunji pathiri like that……this is rice balls in thick coconut milk and sugar.We used to make this spicy also the kunji pathiris we used to mix with chicken or meat curries also…….now I’m posting the sweeter version of kunji pathiri………….



















Ingredients:

1c Rice flour
1c Boiling Water
1½c Thick coconut milk
½ c Sugar or as required
1tsp Cardamom powder


















Method:

1.For rice balls boil the the water and add the rice flour to the water as mix well with a spoon.
2.Then knead well with hand.
3.Now make small balls out of the dough.
4.Steam this balls and keep aside.
5.In a pan heat the coconut milk with sugar and cardamom powder.
6.Add the steamed rice balls and boil the coconut milk till it thickens.
7.Serve slightly cooled.

Unnakai

This is a famous Malabar snack……..I really wonder the ladies in Malabar they spend their most of the time in kitchen………they are not at all lazy……their dishes are all of filling ones and all………after our marriage we went to one of my hubby’s friend’s house in mahe……..we reached there at 6 evening so it was tea time and there where more than 6 items I think……..we couldn’t taste the whole items before that we were full…..next dinner oh god it was like a party menu for both of us………all the pathiris and many curries………….That day we had to stay there because our place is very far away………..and I told I can’t eat any more……….breakfast really was a buffet………….what I prepare for one week we had to taste it in one whole day………….actually my stomach was like it would break now………hehe.Even now also I can’t forget those 1 and half day.The people over there like to cook and make others eat……….This is a very tasty snack……..just to handle it is a little problem but it is really awesome……….



















Ingredients:

4 Ripe plantains (Nethra pazham)
1c Grated coconut
½ c Sugar
½ c Chopped cashew nuts
¼ c Raisins
1tbsp Ghee
Oil for frying

Method:

1.Boil or steam the plaintains till soft.
2.Plaitains should be ripe but stiff.
3.Peel the skin of cooked plaintains and mash it with hand when slightly cooled.
4.In a pan heat ghee add chopped cashews.
5.When cashews are light brown add the raisins and coconut and mix well.
6.Add sugar and mix well.
7.Now take small balls out of mashed plaintains.
8.Grease your hands because this will be little sticky.
9.Just flatten a little with ur fingers keeping the plaintain inside the other palm.
10.Fill in the coconut mixture and close and roll in oval shape.
11.If it is more sticky you can even dust the hands with maida also.
12.Now heat oil in a kadai.
13.Deep fry this unnakais at medium heat till brown.

14.Serve hot with hot tea…………

Mutta Palada

This is an easy snack made usually during Ramadan………this is also best for unexpected guests…..very easy to make and tasty too……these are thin pancakes filled with coconut and nuts.In some places it is called “churul appam”………
Now we shall go to the recipe………




















Ingredients:

For Pancakes:

1c Maida
2 Eggs
Salt
Water

For Filling:

2c Grated Coconut
Sugar
¼ c Chopped cashewnuts
2tbsp Ghee


















Method:

1.In a bowl mix maida,eggs,water and salt and mix well till u get a thin pouring batter.
2.Heat a dosa pan apply a little oil and pour a large spoon of batter to the pan and swirl.
3.Cook the pancake till done.
4.Prepare the pancakes till the batter finishes.
5.In another pan heat ghee add the chopped cashews and fry till light brown.
6.Add the grated coconut and sugar and mix well.
7.Now take each pan cake fill the coconut mixture and roll the pancakes.
8.Have this mutta palada with hot tea.

Gulab Jamun

Gulab jamun, famous sweet in north India………there is no any occasion without this sweet in their place……………I loveeeeee this …………when I made first time the thing was it became brown out but it was not properly cooked inside then I understood where I went wrong and my next try was soooo nice……..this is easy to make just the thing is frying part should be take care………….my kids love this so I make these at home now a days………



















Ingredients:

2c Milk powder
½ tsp Baking soda
¼ c Milk
¼ c Maida
3tbsp Butter
Oil for frying

For Syrup:

1½c Sugar
1c Water
½ tsp Rose water
½ tsp Cardamom powder
½ tsp Lime juice


















Method:

1.Mix milkpowder,baking soda,maida and put butter and crumble with the fingers.
2.Now add the milk little at a time and knead it to a dough.
3.Let it rest for 15 to 20 mins.
4.Now grease the hands and make small balls out of the dough.
5.In a pan mix sugar and water for the syrup.
6.Boil it till the syrup thickens and pour rose water,lime juice and cardamom powder to it.
7.Now heat oil in a kadai for frying the jamuns.
8.The heat of the oil should be low.
9.Fry the jamuns till golden brown.It may take 6 to 7 mins to fry the jamuns.
10.When the jamuns are brown in color drain out the excess oil and put to the warm sugar syrup.
11.Let the jamuns sit and cool and absorb the syrup.
12.Garnish with sliced pistachios and serve.
