Dynamite Shrimps

A post after a long time. Last 2 months which was busy months with many things happened in my life. One of my dreams to launch a cookbook came true. And to launch it in sharjah book fair was another achievement. My book 'Faji's hotpot Book Of Flavours' is out in a shape, A month with lot of happiness and blessings. 

Thank you each and everyone who supported me in this journey. A special thanks to my family, relatives and friends too.

Today I'm posting dynamite shrimps which is a signature dish of restaurant PF Chang's. I have had it once from them and always wanted to try them. And when I tried my hubby and kids really liked it and got a best compliment too. Loved my version more. Happy with the outcome and it tasted really good.

Now to the recipe:





































Ingredients:

For Marination:

20 to 25 Shrimps
2tbsp All purpose flour
3tbsp Corn flour
1/4tsp Pepper powder
1 Egg
Salt
Oil for frying

For The Sauce:

1/2C Mayonaise
3tbsp Hot sauce
3tbsp Ketchup
2 cloves Garlic chopped
1/2 tsp Chilly powder

For Garnishing:

Lettuce 
Spring Onions




































Method:

1.In a bowl mix all the ingredients for marination except shrimps.
2.Once the batter is ready heat the oil in a deep pan.
3.Prepare the sauce by mixing all the ingredient for sauce and keep aside.
4.When the oil is hot coat the shrimps in the flour batter and fry till golden brown.
5.Now mix the fried shrimps with the prepared sauce.




































6.Now in a glass arrange 2 lettuce leaves and keep 5 to 6 shrimps on it and garnish with chopped spring onions.
7.Once mixed with sauce serve immediately.
8.Serve hot.

Fried Rice

Hi everybody........was really busy these days with fasting and eid holidays.Hope u all had a wonderful time.Didn't get time for blogging........now back again to normal routine.Started my blogging days.I had many dishes to share with u but didn't get time now will start sharing those recipes.

Today i'm posting fried rice.......which is very easy and quick to prepare.





































Ingredients:

2c Basmati rice
3cloves garlic
1large carrot
10 Beans
1/2c Sweet corn
1/2c Capsicum
3large Eggs
1/2c Shredded chicken
1/2c Spring onions


3tbsp Soya sauce
3tsp Pepper powder
Salt
Olive Oil or Butter




































Method:

1.In a large vessel pour more water and cook the rice with salt and little oil till just done.
2.Now strain the excess water from rice and let the rice cool down so that the grains doesn't stick one another.
3.Now cut the vegetables into small cubes.
4.In a fry pan heat 1tbsp of olive oil and saute chopped garlic.
5.Then add the carrots,beans,corn and capsicum and saute till slightly cooked.
6.Add pinch of salt and pepper to this.
7.Add the shredded chicken pieces to this and mix well.
8.In another pan heat 1tbsp of olive oil and scrambble the egg with salt and pepper.
9.Now heat a large vessel pour a little olive oil put some rice to the vessel aand some veg mix and scrambbled egg and mix well,pour some soya sauce and just mix it.
10.Again add the rice and rest of the mixture and mix well till all the rice and veg ,egg mixture are incorporated well.
11.Add some pepper powder and salt as required.
12.Add the chopped spring onions.
13.Serve hot with chilly chicken,chicken manchurian etc.........

Tomato Chicken

This is a simple dish of chicken with a tomato touch............this was tasty and will go very well with parotta and nan.........



















Ingredients:

1kg Chicken
2big Onion
7cloves Garlic
1med pc Ginger
1big Tomato
3 Green Chillies or more as per requirement
1/2c Tomato paste
1/4c Tomato ketchup
1 Capsicum
1tsp Cumin powder
1tsp Kasuri methi
Coriander leaves
Salt
Butter or oil

For Marination:

1 1/2 tsp Crushed red whole chillies
3tbsp Yoghurt
A pinch of red colour
Salt


















Method:

1.Cut and clean chicken.
2.In a bowl marinate the chicken with the ingredients under for marinate.
3.Keep aside for 1/2 hr.
4.In a pan heat butter or oil and put chopped onions and salt.
5.When onions are transparent add the chopped garlic,ginger and green chillies and saute well.
6.Now add the tomato paste and tomato kechup and mix well.
7.Now add the marinated chicken and mix well and cook half.
8.When the chicken is half done add the chopped tomatoes,sliced capsicum,cumin powder and kasuri methi and mix well and let the chicken cook fully.
9.After cooked if u want dry let the liquid evaporate and become dry or can serve as semi gravy also.
10.Serve hot with fried rice,parotta or nan.

Szechuan chicken

This is a Chinese dish……..This dish we had once from a Chinese hotel.When I tasted it I felt this is an easy one and I will surely try it out.That day we bought szechuan beef once I made it with beef,it came out well.So I thought I will make the same with chicken also,because chicken is a meat with many dishes can be made.So here comes my version of szechuan chicken this tasted almost same……..


















Ingredients:

1kg Chicken (can use boneless)
1 Big carrot
4 Cloves Garlic
2tbsp Tomato ketchup
2tsp Szechuan sauce
A pinch of red food color
1tbsp Corn flour
½ c Water
Oil
Salt


For Szechuan Sauce:

5 Whole red chillies
2 Cloves garlic
1½ tsp Tomato paste
½ tsp Tomato ketchup
Salt















Method:

1.To make the szechuan sauce boil the red chillies and garlic together.when it is cooked let it cool for sometime.Then grind this along with tomato ketchup and tomato paste and salt .Keep this aside.
2.Now in a pan pour some oil and fry the chicken till light brown color appears.
3.Take chicken from the oil and drain excess oil in kitchen paper.
4.Now heat another pan and add some oil from the oil in which chicken fried.
5.Add chopped garlic and sauté.add the diced onions and sauté.
6.Now add the szechuan sauce and tomato ketchup and sauté.
7.Now add the carrots cut into round pieces and mix well.
8.Add the chicken pieces and mix well.
9.Cover and cook for sometime.
10.Now add the cornflour dissoled in ½ c water.This gives the curry a glazing effect.
11.Now add the color and mix well.Add salt.
12.If u need more spicy add little more szechuan sauce and mix well.
13.Serve hot with fried rice.
