Chocolate Cheese Cake

Celebration days are ahead and this simple and delicious cheese cake for all the occasions...
























Ingredients:

For Base:

1 and half packet Oreo Biscuits
1/2c Melted Butter
1tbsp Brown Sugar

For Cheese Mix:

1sachet Dreamwhip Powder
1/2c Cold Milk
1/2tsp Vanilla essence
1tin Puck Cream
1tin Condensed Milk
200grm Philadelphia Cream Cheese
150grm Cooking Chocolate
2tbsp Cocoa Powder
2 1/2tsp Gelatine
1/4c Water 
Chocolate chips for garnishing 
























Method:

For Base:

1.Crush the biscuits with brown sugar.
2.Mix the melted butter with crushed biscuits.
3.In a spring form pan press this to form a base.
4.Refrigerate this till set.


For Cheese Mix:

1.Beat the dreamwhip powder with cold milk and vanilla essence till fluffy.
2.Add the puck cream to this and mix well.
3.Soak the gelatine in water.
4.Double boil the cooking chocolate with cocoa powder and keep aside.
5.Add the condensed milk and softened cream cheese to the cream mixture and mix well.
6.Now add the melted chocolate to the cream mixture.
7.Double boil the gelatine and pour to the chocolate cream mixture and mix well.



































8.Now pour this over the set base.
9.Set this in fridge till firm.
10.After set garnish with chocolate chips.
11.Run a knife around the tin and remove the cheese cake from the spring form pan.
12.Slice and enjoy the cheese cake.

Coconut Icecream

Happy Children's Day To All Lovely kids!!Today I'm posting an icecream recipe for all the kids to celebrate their day..
Easy icecream with very less ingredients..
























Ingredients:

1tin Evaporated Milk
1tin Condensed Milk
1tin Coconut Cream
1tsp Vanilla Essence

For Topping:

Caramelised Nuts
Toasted Dessicated coconut with sugar
























Method:

1.Freeze the evaporated milk till thick creamy consistency.
2.Beat this till fluffy.
3.Now add the condensed milk,coconut cream and vanilla essence to this and beat well.
4.Now pour this to a container and close well.
5.Freeze this for few hours.























6.Take it out and beat once again with a fork and keep back in the freezer.
7.Freeze for 5 to 6 hrs or overnight.
8.Garnish with crushed caramalized nuts and toasted sweetened dessicated coconut.

Dates Pickle

Hi friends!!Hope all had a wonderful eid and holidays.Today I'm posting a easy pickle.This goes really well with biryanis.

Now to the recipe:




































Ingredients:

1/2kg Dates
6big pods Garlic
1tbsp Chilli powder
1/2c Vinegar
Sugar if needed
Salt

For Tempering:

1/4c Sesame oil
Mustard seeds
1/2tsp Roasted Fenugreek powder
1/2tsp Asafoetida powder



Method:

1.Clean the dates well and deseed the dates.
2.Slice the dates.
3.Mix the dates,red chilly powder and salt in a big bowl and keep aside for 10 to 20 mins.
4.Heat oil in a pan and add mustard seeds.
5.When it splutter add the sliced garlic and saute well.
6.Add fenugreek powder and asafoetida powder and mix well.
7.Add the dates to this and mix well.
8.If needed more sweetness u can add little sugar also.
9.Now off the flame.
10.Pour the vinegar to this and mix well.



































11.Serve along with rotis or biryanis.

Orange Cake

Ingredients:

2c All purpose flour
2c Powdered sugar
3 Eggs room temp
1 1/2tsp Baking powder
1/2tsp Vanilla essence
1c Fresh Orange juice
3/4c Butter room temp 




































Method:

1.Sift the flour and baking powder and keep aside.
2.Now beat the butter and sugar till creamy.
3.Now add eggs one by one beating well after each addition.
4.Now add the vanilla essence.
5.Now fold in the flour slowly.
6.Add the orange juice also in between adding the flour.





































7.Grease the cake tins. 
8.Preheat the oven at 200 degree C for 15 mins.
9.Now pour the batter to prepared tins.
10.Bake this at 175 degree C for 30 to 35 mins or till the tester comes out clean.(And if doing cup cake it will be baked in 20 to 25 mins).
11.Allow the cakes to cool.
12.Enjoy the orange cake!!!

Aval Payasam

This is an easy and very tasty payasam. Here my family and friends liked this payasam.So thought of sharing this payasam with u all on this day.Happy Onam To All !!!



































Ingredients:

1c Brown Aval
2 1/2c Milk
1tin Condensed milk
Sugar if needed
1tsp Cardamom powder
Ghee
Broken cashewnuts
Raisins
























Method:

1.Heat 1tbsp ghee in a pan and fry the aval till crisp.
2.Boil the milk with 1/2tsp cardamom powder till it reduces and thickens.
3.Now add the roasted aval into the milk.
4.Boil in medium heat till aval is cooked.
5.Now add the condensed milk and if more sweetness needed add sugar also.
6.Mix well and allow to boil for few more minutes.



7.Add 1/2tsp cardamom powder more and mix well.
8.Now heat 1tsp ghee in a pan and roast cashewnuts and raisins.
9.Pour this over the payasam.
10 Enjoy the payasam!!!

Falooda

Falooda is one of my favorite dessert.This is very easy and simple to make.



































Ingredients:

1box Vanilla ice cream or any flavour 
1pkt Strawberry jelly
2c Cold Milk
1pkt Falooda sev
1 Banana
10 Grapes
10 Cherries
1 Mango
2tbsp Black Couscous
Sugar as per taste
4tbsp Rose syrup
Fruits or Nuts for garnishing



































Method:

1.Soak the black couscous in water for 30 mins.
2.Mix the milk, rose syrup and sugar and keep aside.
3.Cook the falooda sev in water and drain excess water.
4.Prepare the jelly as per the packet instructions.
5.Cut the fruits into small pieces and keep aside.
6.Drain the black couscous.



































Layering The Falooda:

1.Take a glass put some fruits in the glass.
2.Put 1tsp black couscous.
3.Pour the rose milk.
4.Put some set jelly here and there.
5.Put a large scoop of ice cream over this.
6.If using large glass repeat the process.
7.Garnish with cherry or roasted nuts.
8.Enjoy the falooda!!!

Luqaimat Or Dumplings

Luqaimat is a arabic sweet dish mainly made for iftars and special occasions.These are fried balls dipped in sugar syrup.This is traditionally served with date honey.Kids will surely love this sweet balls.

Now to the recipe..



































Ingredients:

1 1/2c All purpose flour
1tsp Instant yeast
1 1/2tsp Sugar
3tbsp Yoghurt
1c Warm milk or Water
Salt 
Oil for frying

For Sugar Syrup:

1c Sugar
1c Water
1tsp Lime juice
























Method:

1.In a bowl take warm water or milk and add sugar.
2.Sprinkle the yeast over this and let it sit for 5 to 10 mins.
3.In another bowl put the flour,yoghurt and salt.
4.Pour the yeast mixture to this and mix well.
5.The batter should not be so thick or so runny.
6.Let it sit for fermentation for 3 to 4 hrs.



































7.By this time prepare the sugar syrup by boiling the sugar and water till slightly thickens.
8.Add the lime juice to the sugar syrup and keep aside.You can add some rose water also to this syrup.
9.Heat the oil in a kadai.
10.When the batter is fermented pinch small balls out the batter and put in to the hot oil and fry the balls till golden color.If the batter sticks to the hand wet the hand and do this.
11.Drain off  the excess oil.
12.Dip this balls in sugar syrup and take it out.
13.Serve warm.

Kozhi Nirachathu

This is a famous malabar dish.This is little time consuming dish but a real tasty dish.This can be served with chapathis or ghee rice.My version is not a baked one.I cooked the chicken in three stages.To make sure the chicken is totally cooked inside I did this way.

Now to the recipe:
























Ingredients:

For Marinating And Frying:

1kg Chicken
1tsp Chilly powder
1/2tsp Turmeric powder
Coconut oil
Salt

For Gravy:

3 Large Onions
1 Large Tomato
6 Large cloves Garlic
1 Medium pc Ginger
2 to 3 Green chillies
1/2tsp Turmeric powder
2tsp Coriander powder
2tsp Kashmiri chilly powder
1tsp Garam masala powder
1/2 to 1tsp Fennel seeds powder
Coriander leaves
Curry Leaves
1/2c Water
Salt
Coconut oil

For Filling:

2 Hard boiled eggs
1 Onion
1/2 Tomato
1/4tsp Turmeric powder
1/2tsp Red chilly powder
Salt
Coconut oil

For Tempering:

5 to 6 Big Shallots
1/2tsp Broken Cashewnuts
1/2tsp Raisins
1 1/2tsp Ghee
























Method:

Stage 1:

Cooking The Chicken:

1.Clean the chicken well and just apply a 1/4tsp turmeric powder and salt.
2.Cook this chicken in a pot with closed lid in little water for 15 to 20 mins.
3.After cooking let it cool for sometime.
4.Then apply the ingredients below marinating and keep it aside for sometime.

Stage 2:

Egg Filling:

1.Heat oil in a pan and saute the sliced onions.
2.When the onions are transparent add the powders.
3.Now add the tomatoes and mix well.
4.Add the salt.
5.Now when the masala is soft add the boiled egg and mix well.
6.Keep this aside.
























Stage 3:

Gravy:

1.Heat oil in a pan and saute the sliced onions and curry leaves.
2.When the onions are transparent add the ginger garlic paste and green chillies.
3.Now add the spice powders and salt.Kashmiri chilly powder gives a very good colour to the gravy.
4.When the raw smell goes off add the chopped tomatoes.
5.When the tomatoes are soft add some water and close the lid of the pan and cook the gravy for some time and add some coriander leaves.
6.Off the flame and keep it aside.

Stage 4:

Stuffing and Frying:

1.In a large pan, heat 1/2c coconut oil.
2.Stuff  the 2 eggs along with the masala inside the chicken.
3.Fry the marinated and stuffed chicken till golden brown all the sides.

Stage 5:

Mixing:

1.Now add this fried chicken and little from the fried oil to the prepared gravy.
2.Mix well and and cook the chicken for 10 to 15 mins in the gravy with lid closed.
3.If the gravy is too thick you can add some more water.

Stage 6:

Tempering:

1.In a frying pan heat ghee.
2.Add the chopped shallots.
3.When it is browned add the cashewnut and raisins.
4.When everything is roasted add curry leaves and pour this over the chicken.
5.Garnish with coriander leaves.
6.Enjoy this with chappathis or ghee rice!!

Special Bread Toast

Hi Friends!!Ramadan Kareem To All!!!

This is the first time I'm participating for the event Joy from Fasting To Feasting.Thanks to Lubna Karim of Yummy Food to give me the chance to give a guest post for her blog.

This is an easy bread toast with a twist.Mostly we make sweet bread toast.This is not sweet one a little spicy one.Kids will surely like this bread toast.Please have a look at this Special Bread Toast post at Lubna's space too...

Now to the recipe...



































Ingredients:

5 Slices Bread
2 Large eggs
2 tbsp Leftover chicken filling
A hand full of coriander leaves
Salt
Pepper powder for more spicy
Ghee 

























Method:

1.Cut the bread slices into triangular pieces.
2.In a blender put the eggs,chicken mixture,coriander leaves and salt as per taste and pepper powder if using.
3.Blend all together till smooth.
4.Now pour this to a vessel.
5.Heat the pan and apply some ghee.
6.Dip each slice in the egg chicken mixture and toast it on the pan.
7.Toast it till both the sides and light brown and the egg is cooked.
8.Serve hot with tea!!

Chakka Pradhaman

Hi friends!!Hope all are doing well.One of our friend bought a whole big jackfruit (chakka) when he came back from kerala.This is the only fruit which we don't get here in gulf countries.So distributed some to our friends and kept some for us for eating and making this yummy pradhaman.This pradhaman came out so tasty.
Now to the recipe..















































Ingredients:

25 to 30pcs Chakka(jackfruit)
2c Jaggery melted and strained or as per ur sweetness
2c Thin coconut milk
1 1/2c Thick coconut milk
Cardamom powder for flavouring
3tbsp Ghee
Cashewnuts for frying
























Method:

1.Take out the seeds from the pieces of jackfruit.
2.Cook this jackfruit pieces with 1/2c thin coconut milk.You can even pressure cook this.
3.Now when this is fully cooked let it cool for some time.
4.By this time melt the jaggery,strain and keep aside.
5.Once the jackfruit is cooled grind this to a smooth paste.
6.Now in a vessel pour little ghee and pour the jackfruit paste to this and mix well.



































7.Now add the melted jaggery to this and mix well.
8.Boil this till it thickens.
9.Add cardamom powder to this.
10.When this is thickened add the thin coconut milk to this and mix well.
11.Let it boil for sometime till it thickens again.Keep on stirring.
12.Add little ghee while stirring.
13.Now add the the thick coconut milk and bring just to boil.
14 Off the flame and add little more cardamom powder.
15.In another pan heat ghee and fry the cashewnuts till golden color.
16.Pour this over the pradhaman.
17.It tastes yummy hot or cold!!!

3rd Blog Anniversary With Banana Walnut Chocolate Cake !!!!

My 3rd year of blogging!!!Thanks to all for the support u all gave me these years.
This is a very tasty cake with full of banana and chocolate.Banana and chocolate make a very good combination.
This gives 2 loaf cakes or a one big cake.Now to the recipe.


























Ingredients:

1 3/4c All purpose flour
1/2c Cocoa powder
3/4c Unsalted butter(room temp)
2c Powdered sugar
3 Large eggs
1/2tsp Vanilla essence
1/2tsp Banana essence
1/2c Milk
1 1/2tsp Baking powder
1/4tsp Baking soda
2 Riped bananas
1/2c Chopped walnuts
A pinch of salt



Method:

1.Sieve all purpose flour,cocoa powder,baking powder,baking soda and salt.
2.Beat butter and sugar till creamy.
3.Add eggs one by one to this mixture and beat well after each addition.
4.Add vanilla essence and mix well.
5.Now add the flour mixture to this cream mixture little by little and fold in.
6.Add milk slowly to this and mix well.
7.Now add the mashed bananas and chopped walnuts to this.

























8.Grease 2 loaf pans or a big round pan.
9.Pour the batter to these pans.
10.Preheat the oven at 200 degree C for 15 mins
11.Bake the cake at 180 degree C for 40 mins or till the tester comes out clean.
12.Cool the cakes slice and enjoy!!!

Blueberry CheeseCake

This is a No bake cheesecake.Easy to make and very yummy dessert which can really win the heart of guests.This will be set within 2 or 3 hrs.With the below measurements I got 5 individual cups and a 9 inch size cheesecake also.

Now to the recipe...

























Ingredients:

For Base:

1 big packt Digestive biscuits
1tbsp Brown sugar
1/2 c Melted butter

For Cream:

1sachet Dreamwhip powder
1tin Puck cream(plain)
1pkt Cream Cheese (I used Philadelphia cream cheese)
1/2tsp vanilla essence
1/2 to 3/4c Sugar 
1/2c Cold Milk
20grms Gelatine
1/4c Water

For Topping:

1tin Blueberry Topping



































Method:

For Base:

1.Powder the biscuits and brownsugar in the grinder.
2.Pour the melted butter with the biscuits and mix well.
3.Now spread this evenly in some glasses or in a spring form pan lined with foil or parchment paper.
4.Keep this refrigerated till we prepare the cream.

For Cream:

1.Soak the gelatine with 1/4c water.
2.Beat the dreamwhip powder with cold milk and vanilla essence till peaks form.
3.Now add the puck cream and beat well.
4.Now add the cream cheese and sugar and beat till the sugar dissolves.
5.Double boil the gelatine and pour the melted gelatine to the cream cheese mixture.
6.Now pour this  over the biscuit base and refrigerate till almost set.
























7.After it is almost set pour the blueberry topping on top of the cream.
8.Again refrigerate till everything is set and cooled for couple of hrs.
9.Enjoy the blueberry cheesecake!!!!

Kaya Pola

This is a famous tea time snack in malabar side.Very easy to make and good for kids too.Thisis also called Mutta Marichathu.We can make this on stove top and even bake this.



















Ingredients:

2 Large Kerala Bananas
5 medium sized or 4 large Eggs
8 to 10 tbsps Sugar
1/2 tsp Cardamom powder
1/4 c Milk
10 to 15 Cashewnuts broken
1 tbsp Ghee


















Method:

1.Cut the bananas in lenght wise not so thick or so thin.
2.In a frying pan heat ghee and fry the cashewnuts and keep aside.
3.In same ghee saute the cut bananas til light golden color.
4.Keep this aside.
5.In a bowl lightly beat eggs,milk,sugar and cardamom powder.
6.Mix the fried bananas to this egg mixture.
7.Pour this to the same frying pan and spread evenly.
8.Put the fried cashewnuts all over.
9.Cook covered on very low flame for 15 to 20 mins or the centre is fully done.


















10.You can  also bake this in the oven ,grease a tin and pour the mixture to the tin.
11.Cover the tin with foil.
12.Bake at 180 degree c for 15 to 20 mins or till done.
13.Take out when done and allow it to cool slightly.
14.Cut and serve.
