Potato Curry

I like to make simple curries more which is tastier also………….now this curry is very simple and goes very well with chappathi,puris and idiyappam……….kids will also like this………..for me this is the easy curry for another lazy day………now u people will be thinking this blog should be named fajis lazy pot isn’t it…………Lol!!!!!!!!!!!
Now we shall go to the recipe…………



















Ingredients:

2 Medium potatoes
1 Big onion
1 Tomato
3 Green chillies or more if u need more spicy
½ tsp Turmeric powder
½ tsp Redchilly powder
2c Thick coconut milk
Water
Salt

For Tempering:

Oil
Mustard seeds
Urud dal
2 Whole red chillies
Curry leaves


















Method:

1.Peel the potatoes and clean.Cut into medium sized cubes.
2.In a vessel put cubed potatoes,sliced onions,sliced tomatoes,slited green chillies,redchilly powder,turmeric powder and salt.
3.Now pour some water and mix well and cook this till the potatoes are soft.
4.When the potatoes are done just smash this with the back side of a spoon.
5.Now pour the coconut milk and just boil and off the flame.
6.In a small pan heat oil add the mustard and urud dal seeds and when it starts spluttering add whole redchillies.
7.Now add the curry leaves and pour this over the curry.
8.This is very tasty with chappathi,puri and idiyappam or noolappam.

Beetroot Pachadi

Hi everybody,How u all out there……. missed u all for one day…………today again I’m posting a healthy side dish for rice which is very common……..beetroot is very good for health too……..now this is prepared with yoghurt also…….for kids those who don’t like to eat much vegetables will also like this because of its bright color……….and its tasty toooooo…………….



















Ingredients:

1 Big beetroot
1 Medium onion
Small piece ginger
2 Green chillies
2c Yoghurt
Salt
Oil
Curry leaves
Mustard seeds


















Method:

1.Peel the beetroot and grate it.
2.In a pan heat oil put mustard seeds.
3.When it starts spluttering add chopped onions,green chillies,curry leaves and chopped ginger.
4.Saute well and add grated beetroot.
5.Add salt and mix well and cook till the beetroot is soft.
6.Off the flame and let it sit for 5 mins.
7.Now beat the yoghurt in a blender or whisk it with a fork and pour it to the cooked beetroot.
8.Mix well and if it is too thick add little water.
9.Serve with plain rice.

Mamoul(Cookie filled with dates)

This is an arabic cookie filled with date paste………this is very nutritious too…….my kids love that so much so I thought I’ll make it in home…….there are many type mamouls.Filled with dates,pistachios and walnuts…….here I made with date paste.There is mamoul mould but I don’t have that so I shaped it in hand and designed with fork……………now we’ll go to the recipe……


















Ingredients:

2c Semolina
½ c All purpose flour
½ c Sugar
1tsp Yeast or baking powder
½ tsp Rose water
½ c Butter
A pinch of salt
½ c Water
For Filling:
Date paste



















Method:

1.If using yeast, sprinkle the yeast and sugar in warm water ang keep for 10 mins.
2.If using baking powder mix the flours,salt,sugar and baking powder and mix well with the hand.
3.Now add the water and rose water and knead like a dough.
4.Now keep this aside for 1 to 2 hrs.
5.After that make balls out of the dough.
6.If using full dates deseed the date and just blend in a mixer or can use the date paste.
7.Now take each balls and flatten a little in the gresed palm and keep the filling and close it and shape it in the mould or by hand and design it with the fork.
8.Preheat the oven for 200 degree C and bake the mamouls at 180 degree C for 15 to 20 mins or till the top part become light brown.
9.Let it cool for some time and store it in tight container.
10.Enjoy mamouls with hot tea!!!!!!!!!!!!!!

Malabar Mutton Biryani

Biryanis are made for special occasions due to the long procedures……….but I make when I feel to have it………….my kids love biryani so I don’t actually make biryanis very spicy………..and before I used to make it little spicy now I consider the taste of kids too so I make it less spicy…………..my hubby used to say biryani should be little sweet also from the onions…………the taste varies from person to person………actually our side biryanis some add coriander powder and chilly powder……….malabar biryanis are easy and tasty also…………

Now we’ll go to the recipe……….





















Ingredients:

For Masala:

1kg Mutton
8 Medium sized onions
2tbsp Garlic paste
2tbsp Ginger paste
5 Green chillies
3 Medium sized tomatoes
1tsp Garam masala
3tsp Yoghurt
½tsp Turmeric powder
Oil
Salt

For Rice:

1kg Rice
3 Pieces of cinnamon stick
7 Pods of cardamom
7 Cloves
Water to boil
1tbsp Lemon juice

For Dum:
Fried onions
Fried cashewnut and raisins
Chopped coriander leaves and mint leaves
1tsp Pineapple essence
1tsp Yellow food color



































Method:

1.Clean the mutton pieces and keep aside to drain the excess water.
2.Soak the rice for 30mins.
3.In a big vessel take water in large amount in which the rice has to be cooked.
4.Keep the water for boiling.In this put cinnamon sticks,cardamom,cloves and salt.Drain the rice after 30mins.When the water boils add the rice to it.Add lime juice to this to avoid sticking of rice.
5.The rice should not be over cooked.When it just becomes soft drain the rice.Keep aside.We can make ghee rice also, to lessen the oil and ghee part I always do this method.
6.In a nonstick vessel add oil put the sliced onions and sauté till it becomes brown.
7.After the onions are done add the gingergarlicand greenchilli paste.Saute this well.
8.Add ½ tsp turmeric powder and 1tsp garammasala powder.
9.Add the chopped tomatoes and mix well till the tomatoes become soft.
10.Add yoghurt and mix well.
11.Now add the mutton and mix well and cook the mutton till fully done.You can even do the steps from 6 in pressure cooker also.


















12.The masala should have a thick gravy.
13.Add some chopped coriander and mint leaves to this curry.
14.Fry 2 onions for garnishing and dum.Fry the cashewnuts and raisins.now time for dum.
15.In a vessel add some ghee and spread at the bottom.Now add half of the boiled rice.On top of this add some coriander and mint leaves sprinkle some garam masala,half essence and color and some ghee.
16.Now put the masala over this rice.
17.Now add the rest of rice on top of this and spread evenly.
18. In the top of this sprinkle some more garammasala powder,fried cashews and raisins,the essence and color,put the chopped leaves and fried onions ad apply some ghee here and there.
19.Cover the top of the vessel tightly with aluminium foil and close with the lid tightly as no air escapes.
20.Now on the flame into sim and keep in dum for 20 to 30 mins.
21.When opened,we can feel the steam over the top the correct part of dum.
22.For garnishing we can use boiled egg too.
23.Serve hot with yoghurt salad,pappadam and achar.

Mysore Pak

Famous Indian sweet……..this is really famous in south India…….we get both types hard ones and soft ones…….I like the soft ones so I made that way…..this was really tasty and easy to make too.What to do I can’t just stop munching sweets.I can’t imagine a world without sweets crazy isn’t it.Now we’ll have tasty mysore pak……



















Ingredients:

1c Besan flour
1½c Ghee
1 to 2c Sugar(I used only 1c)
1c Water


















Method:

1.Heat a heavy bottomed vessel.Pour water and sugar and bring to boil.
2.Boil the sugar and water till the sugar reaches one string consistency.To check the consistency just take a drop in between the fingers and check.There will be one string appears as the syrup thickens.
3.Sieve the besan flour to avoid lumps.
4.Add the besan flour and ghee together to the syrup and keep on stirring to avoid lumps.
5.Stir well till it leaves the sides of the pan.
6.To see whether it is done take a small piece and roll it if it is easy to roll it is done.
7.Pour this to a thali and keep for cooling.
8.When it is cooled and still little warm cut into diamonds,squares or rectangles.
9.Have the tasty mysore paks!!!!!!!!!

Vegetable Soup

Soups are something I make for dinner on a lazy day……….but in winters soups will be there most of the days for dinner…………its so good to have a hot soup in winters...........so lets have a soup for today………….

















Ingredients:

1c Sweet corn frozen
1 Carrot
½ c Cabbage chopped
2tbsp Oats
2tbsp Corn flour
Water
Pepper Powder
Salt
1tbsp Lime juice
1 Egg(fully optional)

















Method:

1.In a vessel put corn and sufficient water and boil.
2.When the sweet corn is half done add the chopped carrot and cabbage.
3.Let it boil allow the water to reduce.
4.Now add the oats and allow to boil.
5.Now in add the corn flour dissolved in ¼ c water to the soup mixture.6.Allow to boil till it thickens to a soup consistency.
7.Now add salt,lime juice and pepper powder.
8.Now beat an egg and just pour over the soup and stir.(this step is totally optional)
9.Serve hot.

Chocolate Cake

Chocolate cake is something so hmmmmmm……..can’t think of it isn’t it………this cake I made for my hubby’s b’day but now I’m posting this for all my friends all over on this special day.”Happy Friendship Day” to u all……….so this will be a great treat for u all……thanks to all my friends for being with me as a good friend and supporting me and being with me in all my happy and sad moments……..
Actually whenever I make cake with icing I use dreamwhip for it,u would also see that in my all cakes.Because it is easy and no more butter comsuming…….but one of my friend asked me dreamwhip company has any tie up with u……… so I thought I will do a different icing in this but again without dreamwhip I can’t ……..so I used it for decoration…………

Now we shall have the cake……..




















Ingredients:

2c All pupose flour
½c Cocoa powder
1½c Powdered sugar
1½tsp Baking powder
2 Eggs room temp
¾c Butter room temp
½ c Milk
½ tsp Vanilla essence

For Icing:

½ c Butter melted
1 ½ c Icing sugar
½ c Cocoa powder
¼ c Milk

For Decoration:

2 Sachet dreamwhip powder
¼ c Cold milk

















Method:

1.Sieve flour,cocoa powder and baking powder and keep aside.
2.In a bowl put powdered sugar and butter and beat well with a beater till it is very creamy.
3.Now add eggs one by one beating after each addition.
4.Add vanilla essence and mix well.
5.Now add the flour mixture slowly and fold in with a wooden spoon.
6.Keep adding little amount of milk in between the addition of flour to make the batter little loose and again not so loose batter.
7.Fold in nicely till all the flour is mixed well.
8.Grease a cake tin and pour the cake batter to the prepared tin.Level the top by a spoon or by tapping the cake tin on the kitchen counter.
9.Preheat the oven at 200 degree C for 15 mins.
10.Bake the cake at 165 degree C for 35 to 40 mins or the tester come out clean.
11.When the cake is done take out from the oven and allow it to cool completely for doing the icing.
12.Now for icing beat the butter and icing sugar well and add the cocoa powder and beat well.
13.Add milk in between to make the spreadable consistency.
14.When it is reached the consistency keep this in the fridge till the cake is cooled.


















15. Now for decoration,in a bowl beat dreamwhip powder with cold milk till fluffy and peaks formed.
16.Keep this also in fridge.
17.Now when the cake is cooled take out the chocolate icing mixture and beat lightly with a spoon.
18.Spread this all over the cake and keep this for 10mins in the fridge.
19.Now fill a cake decorator with the dreamwhip and decorate the cake as your wish.
20.Cut th cake into slices and serve.
