Red Velvet Cake

I was thinking to make this cake for a long time..........but didn't find a good reason to make this one.Yesterday was our 9th wedding anniversary and got a very good reason to bake this cake......and I was really happy to see the final result.The cake cake came out so good.

And one thing I got mistake on the cake was the spelling of 'anniversary',I missed one 'r' on the cake while writing because my 3 r's(my kids ridha,raed and raghd) were making me crazy and I missed an 'r' while writing LOL!!!!!!!!!!

I didn't notice the mistake then also when I took the cake and focused the camera on the cake I saw something was missing there Oh no I made spelling mistake hehehe!!!!!!!!!!
I was a little disappointed, then thought only we r there so let it be like that........
Anyway lets go to the cake........this is the recipe adapted from joyofbaking.com.

I made the cake in 2 different size pans.Because i didn't have the same sized ones.



















Ingredients:

2 1/2c All purpose flour
1tsp Baking powder
1 1/2 c Granulated sugar
1/2 c Butter room temp
2 Large Eggs room temp
1tsp Vanilla essence
3tbsp Cocoa powder
1c Butter Milk(I used yoghurt)
2tbsp Red liquid food color
1tsp Baking soda
1tsp Vinegar

For Frosting:

4 Sachets Dream whip powder
1 c Cream cheese
1/2 c Powdered sugar
1/2 c Cold milk
1tsp vanilla essence
2drops red food color for writing
Sugar sprinkles for side



















Method:

1.Sift flour,baking powder and cocoa powder and keep aside.
2.Mix the red color to the butter milk and keep aside.
3.Now in a bowl put butter and just beat for some seconds.
4.Now add the sugar and beat till sugar is dissolved.
5.Now add egg one at a time and beat well after each addition.
6.Add vanilla essence and mix well.
7.Now add the flour and butter milk mixture alternatively and mix well.
8.Now in a small bowl take vinegar and put the baking soda to the vinegar.
9.When its bubbling pour this to the batter and mix well.
10.Preheat the oven at 200 degree C for 15 mins.
11.Grease 2 baking pans and line with wax paper.
12.Pour the prepared batter to the tins.
13.Bake at 175 degree C for 30 to 35 mins or till the tester comes out clean.


















14.Allow the cake to cool at room temp and then keep in the fridge for 1 hr.
15.For frosting,In a bowl put the dream whip powder and pour cold milk and beat well till fluffy and peaks appears.
16.Add vanilla essence and cream cheese,powdered sugar and mix well.
17.Now for assembling the cake,cut both the cake horizontally into 2 pieces.
18.Keep a layer of cake spread the frosting on this layer then keep the other piece on top of the frosting then again spread the frosting like this finish up the layers.
19.Now spread the frosting on top and sides of the cake and smooth out well.
20.Decorate with sugar sprinkles.
21.In rest of the frosting add the color for writing and piping any other decorations.
22. Refrigerate cake for couple of hour before serving.
23.Slice and enjoy the cake.........

This's a wonderful cake to celebrate such a milestone. I've always wanted to bake red velvet cake even since I first saw it at BettyCrocker's. Totally love the red color :)
