Mutta Kappa Biryani

This is an easy dish to make any time.Tapioca is a vegetable which goes very well with fish or meat.This is a mix of egg and tapioca and it taste too good.I saw this in a malayalam movie and thought of trying it out and the result was very tasty.

























Ingredients:

1kg Kappa (Tapioca)
5 eggs
2 Onions
2tsp Ginger garlic crushed
4 Green Chilly
1 Tomato
1tsp Coriander powder
1/2tsp Turmeric powder
1tsp Red chili powder
1/2tsp Fennel seed powder
1/2tsp Garam masala powder
Salt
Curry leaves
Coriander leaves

























Method:

1. Clean and cut the tapioca and boil with salt and 1/4 tsp turmeric powder in a large vessel.
2. Once cooked drain the excess water.
3. In a pan heat coconut oil add the sliced onions and sauté till transparent.
4. Add the crushed ginger garlic and chopped green chilly.
5. Sauté well and add the powder spices and mix well.




























6. Now add the tomatoes and mix well till tomatoes are soft. Add 1/2 cup of water.
7. Let it boil for few mins.
8. Now break the eggs and add to the masala and mix well till it scramble.
9. Now and the cooked tapioca and mix very well.
10. Off the flame and add the curry leaves and coriander leaves.
11. Serve hot.

Indonesian Chilli Egg

Hi friends...Today posting monthly challenge of our MFB.This month the challenge was indonesian cooking.Was thinking to cook something sweet but last few weeks were very busy with kids exams,holidays and reopening of school.


So I just pick out an easy recipe.This can be made very soon with very few ingredients.Because of this challenge came across with many indonesian recipes.

Now to the recipe:




































Ingredients:

4 Eggs
1 Tomato
4 cloves Garlic
3 Red chillies
2 Green chillies
4 Shallots
1/4tsp Vinegar
Oil 
Salt
Coriander leaves for garnishing

























Method:

1.Hard boil the eggs and remove the shell and keep aside.
2.In a pan boil tomato,garlic,chillies and shallots for few minutes.
3.Once its cooled grind to a paste with salt.
4.In another pan pour little oil and shallow fry the boiled eggs till light brown.
5.Take out the eggs and keep aside.
6.Now add the grinded chilli paste to the oil and saute till raw smell goes off.




































7.Now add the fried eggs to the sauted paste and mix well.
8.Add the vinegar and mix well.
9.Garnish with coriander leaves.

























10.Serve with plain rice or rotis..

Egg Curry

Very simple curry for chapathis, kubus and even for rice…………..easy and fast dish and tasty too.Eggs are my kids fav so they like eggs curries very much……….




















Ingredients:

4 Eggs
2 Onions
1 Tomato
4 Green chillies
½ tsp Turmeric powder
¾ tsp Red chilly powder or more as per taste
½ tsp Fennel seeds powder
1½ c Thick coconut milk
Salt
Oil
Curry leaves



















Method:
1.In a pan heat oil and sauté sliced onions till it slightly changes color.
2.Now add slited green chillies and curry leaves.
3.Add the turmeric and red chilly powders and sauté well.4.Now add the sliced tomatoes and salt and mix well till tomatoes becomes soft.
5.Now break each eggs to this mixture slowly without breaking the yolk.
6.Now put the flame into medium and close the lid.
7.After 5 mins open the lid and the yolk will be cooked and just turn over the yolks one by one and cook the other side also.
8.Now add the coconut milk and fennel seeds powder and mix well.
9.Garnish with some more curry leaves .
10.Serve hot with kubus,bread,chappathi or rice.

Egg Fritters

"HAPPY INDEPENDENCE DAY" to all the Indians all over the world.......
Egg fritters are also made commonly for iftars……..its very easy and tasty……..the filling also is lil spicy so no need of another sauces to have these.This can be dipped in besan mixture or maida mixture…..I mostly use maida mixture to coat this.
Now we shall go to the recipe…….




















Ingredients:

4 Eggs
1 Big onion
1 Tomato
¼ tsp Turmeric powder
½ tsp Chilly powder
Salt
Oil
Oil for frying

For Coating:

Maida
Salt
Water


Method:

1.Boil the eggs till fully done.
2.When the eggs are little cooled remove the shell and cut into half.
3.Seperate the yellow yolks from the egg whites.
4.Now in a pan heat little oil and add the chopped onions.
5.When the onions start changing color add the turmeric powder and chilly powder.
6.Now when the raw smell of the powders are gone add the chopped tomatoes.
7.When the tomatoes are soft add the removed egg yolks to the mixture and mix well.
8.Off the flame and allow it cool a bit.
9.Now fill this mixture to the egg white holes as seen below:



















10.Now make a thick batter of maida,salt and water.
11.Now coat each egg in this batter with a spoon.
12.Heat oil in a kadai and put each coated eggs in the hot oil and fry till the outer cover is crispy.Keep the oil in medium flame.
13.Be careful while frying any part of the egg white touches the hot oil it will splutter a bit so be sure to coat well.
14.Serve hot.

Egg Roast

Eggs are again used as an easy non-vegetarian dish for my non-veg kids………my small kid likes egg white so much……sandwiches with egg whites are also favourite dish here….here we all like eggs but thinking of health I avoid egg yolks….
This I made for vellappam,both were good combination…..
















Ingredients:

4 Eggs
5 Medium onions
1 Big tomato
2 Green chillies
3 Cloves garlic
1 Small piece ginger
1tsp Redchilly powder
½ tsp Turmeric powder
½ cup Thick coconut milk
Curry leaves
Salt
Oil

Method:

1.Boil the eggs and keep aside.
2.In a pan heat oil add the sliced onions and sauté till golden brown.
3.Add the garlic and ginger cut into thin sticks and the green chillies.
4.When this is done add the red chilly powder and turmeric powder.
5.Saute till the raw smell goes away.
6.After that add chopped tomatoes.
7.Remove the shell of boiled eggs and cut into half.
8.Put these eggs into the masala and mix till the masala is coated on eggs.
9.Now add the coconut milk and thicken the gravy.
10.Off the flame and add curry leaves.
11.Serve hot with vellappam,chappathi or kubus.
