Stromboli

Hi friends!! How r u all? Posting a recipe after a long time. This may be my last post of this year...So thought of posting a recipe which can be made for special dinners...
An advanced New Year Wishes To All....Alhamdulillah this year went very well...Hoping for a good and healthy year ahead and wishing u all the same...































































Ingredients:

For Dough:

2c All purpose flour
1tsp Baking powder
1tsp Dry active yeast
1tsp Sugar
Olive oil
Water
Salt

For Filling:

1pckt Sausage or 2c Shredded chicken
1small Capsicum
1 Onion
1/2c Sweet corn cooked
1tsp Pepper powder
Ketchup For spreading
White sauce
Olives
Oil
Mozzarella cheese

1 Egg for brushing
Sesame seeds for sprinkling

For White Sauce:

1tbsp Butter
2tsp All purpose flour
1c Milk
1/2tsp Oregano
1/4tsp Parsley
1/4tsp Thyme
1/4tsp Basil
Salt

























Method:

Dough:

1.Warm the water and sprinkle the sugar and yeast in this. Set aside for 5 mins.
2.In a bowl put flour baking powder and salt.
3.Add the yeast mixture to this and knead well and add the oil in between kneading the dough.
4.Knead the dough well till soft and keep this aside for 2 hrs till it rises to double.

Making White Sauce:

1.Heat the butter in a pan and mix the flour and saute well.
2.Now add milk and mix well.
3.Add salt, oregano, parsley, basil and thyme and mix well.
4.Boil till the sauce becomes thick and creamy.
5.Off the flame and the sauce is ready.

Making the Filling:

1.In a pan put oil and put the sausage or chicken and saute well.
2Add salt and pepper powder to this and mix well.
3.Cook the sausage well and off the flame.


























Filling And Baking:

1.Once the dough is doubled well punch down the air .
2.Sprinkle some flour on working space and roll the dough into a large rectangle.
3.Now spread ketchup.
4.Now put the cooked sausage or chicken.
5.Then put the diced veggies ,olives and corn.
6.Spread the prepared white sauce and mozzarella cheese.
7.Now roll this into a log.
8.Now form this to a circle.
9.Now beat the egg slightly and give a egg wash on the Stromboli.
10.Sprinkle sesame seeds over this.
11.Now give small cuts on the Stromboli.
12.Grease a round baking tray and keep the Stromboli on the tray.
13 Preheat the oven at 200 degree C for 10 mins.
14.Bake the Stromboli at 180 degree c for 15 to 20 mins or till its cooked.
15.Cut into pieces and serve..

Stuffed Buns

Home made buns are really tasty and if it is stuffed then it is more tasty……….I used chicken stuffing for this buns……you can make sweet stuffings also……….at the time of baking it smells too good like a bakery……now to the stuffed buns…….


















Ingredients:

For Buns:

2c All purpose flour
2tsp Dry instant yeast
1c Milk
3tbsp Vegetable oil
2tsp Sugar
Salt
1 Egg beaten for brushing


For Stuffing:

2c Cooked shredded Chicken
1 Onion
1 Tomato
¼ tsp Turmeric powder
½ tsp Red chilly powder
1tsp Ginger garlic paste
½ tsp Garam masala powder

Salt
Oil


















Method:

1.Warm the milk and sprinkle the yeast and sugar in the milk.
2.Keep for 10 mins.
3.In a bowl mix all purpose flour and salt.
4.Slowly pour the milk yeast mixture to the flour and start kneading.
5.Add oil in between and knead well for 10 mins.
6.Keep this for rising for 1 to 1 ½ hrs.Cover it with wet cloth.
7.Now heat oil in a pan and add chopped onions ans sauté well.
8.Now add ginger garlic paste and sauté well.
9.Add the turmeric and redchilly powder and mix well.
10.Add the chopped tomatoes and mix well.
11.Add the shredded chicken and mix well with the masala and put garam masala powder and mix.
12.After the flour is risen punch down the dough and knead once more.
13.Take small balls out of the dough and flatten in the palm.
14.Place a spoon of filling inside the flattened ball and seal it properly.
15.Line up a baking tray with parchment paper and place the stuffed buns on it with the sealed portion facing down.
16.Cover the buns with cling film and allow it to rest for 45 mins to 1 hr.
17.Preheat the oven at 200 degree C for 20 mins.
18.Brush the buns with beaten egg.
19.Bake the buns at 175 degree C for 20 to 25 mins or till done.
20.Enjoy the stuffed buns.

Croissants

When I made croissants for the first time I loved it so much because I got the correct shape.Second time the shape was little bigger but it tasted the same.Because now the climate is not favorable to make croissants………..its so hot the butter sheet melts in no second………whenever I took the dough out of the fridge to roll it, the butter was oozing out………last time when I made it was not so hot as now, so I could make it easily……….now had to act so fast to avoid the melting of butter……….this is a little bit long process but we get the result ………….so I don’t worry about the process………..now I’ll make this when the climate changes……….



















Ingredients:

3c All purpose flour
1½ tsp Yeast
3tbsp Sugar
1tsp Salt
2tbsp Butter room temp
1c Milk
Chocolate chunks (optional)
200grms Cold butter for making sheets

For Brushing:

1 Egg
¼ c Water



















Method:

Step 1:

1.Mix the yeast and sugar in warm milk and keep aside for 10 mins.
2.In a bowl put flour,salt and butter.Add milk yeast mixture slowly to the flour ans start kneading.Knead till the dough is soft and elastic.
3.Now cover this with a wet cloth and keep for rising for 2 to 3 hrs.


Step 2:Making Butter sheet:

1.I do it on aluminium foil.
2.Take a big squre piece of aluminiun foil.In the middle place the cold butter block.
3.Now with a rolling pin beat and flatten the butter to a thin square.The butter should not be soft.
4.Cover it with the aluminium foil and keep it in the fridge.


Step 3:

1.After 3 hrs take the dough and punch down.
2.Now flour the surface and roll the dough into a big rectangle.
3.Now take out the butter sheet and keep it on one side of the flattened dough leaving the edges.
4.Now the dough should almost fill more than half portion with the butter sheet.
5.Now fold the left end without butter on the butter top and fold the other end on the dough.
6.Now roll the dough to another long rectangle to incorporate the butter and dough and fold in three folds.
7.Wrap this in a plastic wrapper and keep in the refrigerator for 2 hrs.



















Step 4:

1.After 2 hrs take out the dough and again roll it into a rectangle.
2.Again fold it in four folds such as two end towards the middle then close like a book.
3.Wrap this again in a plastic wrapper and refrigerate it for another 2 hrs.
Step 5:
1.Now again take out the dough and roll it into a big rectangle.
2.Now cut the dough lengthwise into two halves .
3.Now cut small triangles out of these lengthy rectangles with a pizza cutter or a knife.
4.Now roll each triangles from the widest side to the tip.
5.Stretch the tip of the triangle and roll from the widest side.
6.We can even fill some croissants with some cooking chocolate pieces and roll it.
7.Now line a baking sheet with a parchment paper.
8.Place each croissant on the sheet, give some space in between.
9.Preheat the oven to 200 degree C for 15 mins.
10.Let the croissants to rise for another 40 to 45 mins.
11.Beat the egg and water together and brush this over the croissants.
12.Bake the croissants at 165 degree C for 30 to 40 mins or till it is light brown color and crispy.
13.Serve when slightly cooled.

Pizza

I got some requests to post pizza……….so I thought I’ll post it today……….homemade pizzas are really awesome……..when the time of baking pizza my hubby was saying it feels like went to pizza hut!!!!!!!! Actually the aroma of oregano spreads………I made the pizza sauce also.Once I bought pizza sauce from shop but I didn’t like the taste of it…….so I tried my version of pizza sauce………it was really nice……..preserved ones and fresh ones are really different…….pizzas are made on pizza stone I don’t have pizza stone so I used an old fry pan….. I removed the handle of those fry pans and used it for baking pizzas it came out very well in these pans………one pizza I made with thick crust and another with medium thick crust……….now have the homemade pizza………..
















Ingredients:

For Base:

3c All purpose flour
1c Milk
2tsp Instant dry yeast
3tsp Sugar
1tbsp Olive oil
1tsp Salt


For Pizza Sauce:

1 Big tomato
1tbsp Tomato paste
1 ½ tsp Tomato ketchup
3 Cloves garlic
1tsp Oregano leaves
½ tsp Basil leaves
1tsp Sugar
½ tsp Salt
1tsp Olive oil
1c Water



















For Topping:

½ kg Boneless Chicken
Pepper powder or Tikka masala
½ tsp Salt if using pepper powder
1tsp Olive oil
1 Medium green capsicum
1 Big onion
½ c Olive rings
Grated cheese



















Method:

Step 1:

1.Warm the milk and sprinkle yeast and sugar on it and keep aside for 10 mins.
2.In a bowl take flour,salt and add milkyeast mixture and start kneading slowly.
3.Add some olive oil and knead it till soft and elastic dough.
4.Keep it aside for 2 hrs covered with a wet cloth.


Step 2:

1.For pizza sauce heat oil in the pan.
2.Add chopped garlics and sauté till raw smell goes away.
3.Now add chopped tomatoes and sauté till tomatoes are really soft.
4.Now add tomato paste and tomato ketchup andd mix well.
5.Add water,sugar and salt and mix well.
6.Add oregano and basil leaves and mix well.
7.Boil the mixture and boil till the mixture thickens and it comes to the consistency of the sauce.
8.Off the flame and allow it to cool.



















Step 3:

1.Cut the chicken into small cubes.
2.Now heat oil in a pan add the chicken pieces and add tikka masala or pepper powder.If using pepper powder add salt or if tikka masal then no need to add salt.
3.Saute well till the chicken is cooked.Off the flame.
4.Dice the onions,slice the capsicum and keep aside.



















Step 4:

1.Now take out the dough and punch down the air.
2.Divide it into two halfs.
3.Grease the pan with a little olive oil and flatten one portion of the dough in the pan with the hand to your required thickness.
4.Now spread some pizza sauce on top of the flattened dough now put some prepared chicken pieces.
5.Now add the capsicums,onions and olives.
6. Now sprinkle the grated cheese evenly over this
7.. Repeat the same with other half portion of dough.Can make another toppings with sausage or vegetables too or use the same topping.
8.Preheat the oven at 200 degree C for 15mins.
9.Now bake the pizzas at 165 degree C for 20 mins.Till the bottom is light brown color and cheese top melts and becomes light brown.
10.Cut the pizzas with pizza cutter or knife and serve.

Nan

This is an Indian bread used with dal curries or meat curries.This I made with butter chicken……….this can be made in oven or on stove top……first 2 or 3 I made in oven but it is becoming more crispier so I made the rest on stove top in the tawa……..it was really tasty with butter chicken………….this can be made in both ways…….
















Ingredients:

3½c All purpose flour
½ c Curd
1 Egg
¼ c Butter softened
3tsp Sugar
Salt
1½tsp Dry instant yeast
Water


Method:

1.Warm ½ c water and sprinkle yeast and sugar and keep aside for 10 mins.
2.In a bowl put flour,curd,butter,salt and slightly beaten egg and start combining.
3.Add the yeast water and knead the dough,if water is needed add little water at a time and knead till u get an elastic dough.
4.Cover the dough with a wet clooth and keep it for 1 to 1½hrs.
5.After that take the dough make balls out of the dough.
6.Roll the ball with a rolling pin and just strech one part to get the shape.
7.Heat a tawa place one nan at a time and cook till brown spots appears on the nan.
8.If needed apply some butter on the nan.
9.Serve hot.

Cinnamon rolls

Baking bun items is really interesting part………….when thing of baking first hits cake in mind but when I started baking buns and breads I was thinking of what difference can be made in these items.Then one day cinnamon rolls stuck to my mind.If I think of baking something I have to do it that day itself otherwise I will be restless that day till I bake it!!!!!!!!!!
Then I went on searching an easy recipe of cinnamon rolls.Cinnamon flavour is really hmmmmmmmm……..when the time of baking these rolls house was full of aroma of cinnamon……..which we feel like went to a bakery…………..
These came out so well.Here comes the cinnamon rolls.




















Ingredients:

3c All purpose flour
1½ tsp dry instant yeast
1c warm milk
¼c melted butter
3tsp sugar
1tsp salt

Filling:


1c brown sugar or even white sugar can be used
1½ tsp cinnamon powder



















Method:

1.Sprinkle yeast over warm milk mixed with sugar for 10 mins.
2.In a large bowl mix the flour and salt.Make a small well in middle of the flour and pour the milk yeast mixture to it and mix well add 3tbsp of melted butter and knead well for 10 mins till it attains a smooth elastin dough.
3.Cover this dough with a wet cloth and keep for raising for 1 to 2 hrs.
4.After the dough is raised remove the cloth and punch down the air from the dough and again allow the dough to rest for 10 more mins.
5.While the dough rests make the filling for the rolls.Mix cinnamon powder to the sugar and mix well with a spoon.
6.Now place the dough on a floured surface and roll the dough with a rolling pin to a big rectangle.
7.Apply a coat of melted butter over it.Now sprinkle the sugar and cinnamon mixture over the butter.Spread evenly all over the dough leaving the edges.
8.Now start rolling the dough like a swiss roll.
9.Cut the dough into pieces and place over the baking tray facing the cut portion up leaving 2” in between the rolls.
10.Allow this to rest for another 45 mins till it becomes double in size.
11.Preheat the oven at 200 degree C to 15 mins.
12.After the rolls are raisen bake the rolls at 180 degree C for 20 to 25 mins or a tester comes out clean.Bake it on the middle rack.

Kubus or Pita bread

When I made kubus for first time I was so happy to see the result.But the first one didn’t puffed up fully so I became little depressed but the rest came out very well.My hubby too loved this fresh homemade kubus.




















Ingredients:

2c All purpose flour
1and ½ tsp dry instant yeast
2tsp sugar
1tsp salt
1tbsp Olive oil
Warm water



Method:

1.Sprinkle yeast on warm water with sugar.Keep this aside for 5 mins.
2.In a bowl take the flour a nd salt now start adding the yeast mixture slowly and knead it to a dough add olive oil in between and knead well till the dough becomes smooth and elastic.
3.Keep this in a greased bowl for 1 to 2 hours.
4.After 2 hours punch out the air and knead once again.
5.Now make big lemon sized balls from this dough and keep aside for 10 mins covered with wet cloth to avoid drying.



















6.Now on the grill part of the oven and preheat the oven in high flame.
7.Roll out the balls into medium sized discs.
8.Keep one pizza stone or any pan in the middle rack of the oven.
9.Now place each disc on this pan and bake for 3 mins till it puffs up fully and brown spots appears on the top.
10 Now this can be served with hammus and grilled chicken or any curries.
