Thakkali Chamanthy

This is an easy chamanthy for idli and dosa……..with very less ingredients which is always available in our kitchen…………..



















Ingredients:
1 Big onion
2 Medium tomatoes
1 Small piece Ginger
¼ tsp Turmeric powder
½ tsp Red chilly powder
Salt
Oil

For Tempering:

Oil
Mustard seeds
2 Whole red chillies
Curry leaves



















Method:

1.Heat oil in a kadai and sauté chopped onion in it.
2.When it is transparent add chopped ginger and mix well.
3.Add the turmeric powder and redchilly powder and sauté well.
4.Now add the chopped tomatoes.
5.When the tomatoes are soft add salt and off the flame.
6.Let this cool for sometimes.
7.Grind this mixture in a mixer.
8.Heat Little oil in a pan.
9.Put the mustard seeds,when this starts spluttering add the whole red chillies and curry leaves.
10.Add the grind mixture to this and mix well and sauté till the water evaporates and the mixture thickens.
11.Serve with idlis or dosas.

Muthabal or Baba Ganoush

This is an Arabic dip made with egg plant.This is very tasty with kubus and grills and very healthy too………this is very easy to make.There are many versions I think.Some used to add yoghurt in this.But I didn’t add yoghurt.Here comes my version…..
























Ingredients:

1 Big eggplant
2tbsp Tahini(sesame paste)
2 Cloves garlic
1tsp Lime juice
Salt

Method:

1.Bake the egg plant in the oven till it is soft.
2.Allow to cool and peel the skin.
3.In a bowl add eggplant,crushed garlic,tahini,lime juice and salt.
4.Mash with a mortar or in a blender.
5.I just give one pulse in my blender.
6.Garnish with olive oil,pomegranate seeds and paprika powder.
7.Serve along with kubus and grilled chicken.

Hammus (AN ARABIC DIP)

We really like Arabic foods.So I thought why don’t I make hammus at home that’s how I tried hammus at home.The first try was not so perfect.But the second try was superb.Everybody liked it.My small kid likes to eat peas items.She really love hammus.She have it alone.After she starts with hammus it will be seen on her face.Her face will be fully covered with hammus.Its so funny to see………………


















Ingredients:

1c white chick peas(dry or tinned)
2 cloves garlic
4 0r 5 tbsp Tahina(sesame paste)

Lime juice of one lime
2tsp olive oil
Salt to taste

Method:

1.Mix all the ingredients in a blender and blend well till a smooth cream paste.If the paste is little thick add the water in which chickpeas is boiled.

2.Put this in a bowl and pour some olive oil on top and serve.This is best with kubus and grilled chicken or fish.
